MOM'S SHORTBREAD COOKIES
My mum's recipe for shortbread cookies. My friends would always ask for these as Christmas or birthday gifts! Can be topped with homemade butter/icing sugar frosting. You can substitute half the butter with margarine if you want. In the picture, I added a teaspoon of lemon zest and made an icing with lemon zest, a squeeze of lemon juice and icing sugar.

Tips:
- Use cold butter: Cold butter creates a flakier cookie. If your butter is too soft, it will spread out too much and the cookies will be more dense.
- Cream the butter and sugar together until light and fluffy: This will help to incorporate air into the dough, which will make the cookies lighter and more tender.
- Add the eggs one at a time, beating well after each addition: This will help to prevent the cookies from curdling.
- Stir in the dry ingredients gradually: This will help to prevent the dough from becoming tough.
- Chill the dough for at least 30 minutes before baking: This will help the cookies to hold their shape and prevent them from spreading out too much.
- Bake the cookies in a preheated oven: This will help to ensure that the cookies bake evenly.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely: This will help to prevent the cookies from breaking.
Conclusion:
These classic shortbread cookies are perfect for any occasion. They're simple to make and always a crowd-pleaser. With a few simple tips, you can make sure your shortbread cookies turn out perfect every time.
