If you are looking for an easy chicken recipe to make for dinner, this Monterey chicken recipe is it!

Provided by Camille Beckstrand

Categories     Main Course

Time 25m

Number Of Ingredients 7

6 boneless chicken breasts
salt and pepper (to taste)
1 cup barbecue sauce
10 strips bacon (cooked)
1 ½ cups Monterey Jack Cheese Blend (shredded)
2 tomatoes (diced)
1 bunch green onions (diced)

Steps:

  • Pound the chicken breasts so that they flat (this will also help make the chicken very tender). Season with salt and pepper.
  • Cook the chicken over an outdoor grill over medium high heat; 6-7 minutes per side or until fully cooked. If you don't have an outdoor grill, you could easily cook it over an indoor grill or in a skillet on the stove top that has been sprayed with cooking spray.
  • After the chicken is finished cooking, transfer the chicken breasts to a large baking sheet covered in aluminum foil. Spread 2-3 tablespoons of barbecue sauce over each chicken breast. Top each chicken breast with 2 slices of bacon and and a handful of the shredded cheese mix. Place the baking sheet in an oven broiler (or microwave long enough to melt the cheese). Top with diced tomatoes and green onions. Serve immediately.

Tips:

  • Use a heavy skillet: A heavy skillet will help to evenly distribute heat and prevent the chicken from burning.
  • Preheat the skillet: Preheat the skillet over medium-high heat before adding the chicken. This will help to sear the chicken and lock in the juices.
  • Don't overcrowd the skillet: Cook the chicken in batches if necessary to avoid overcrowding the skillet. Overcrowding will prevent the chicken from cooking evenly.
  • Use a meat thermometer: Use a meat thermometer to ensure that the chicken is cooked through to an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest: Let the chicken rest for a few minutes before serving. This will help to redistribute the juices and make the chicken more tender.
