Number Of Ingredients 7

1 cup self-raising flour
1/4 teaspoon bicarbonate of soda
1/4 cup caster sugar
1 lightly beaten egg
3/4 cup milk
30 gram butter, melted
jam, whipped cream, to serve

  • Sift flour and soda together into a medium bowl. Stir in sugar. Make a well in centre. Gradually stir in egg and enough milk for a smooth, pouring consistency. Rest 15 minutes.
  • Heat a large, non-stick frying pan on medium. Brush with butter. Working in 3 batches of 6, drop tablespoons of batter into pan, allowing room for spreading. Cook 1-2 minutes, until bubbles appear on surface. Turn and cook 1 minute further, until golden. Brush pan with butter between batches.

PIKELETS (SCOTTISH PANCAKES)

Pikelets (Scottish Pancakes) image

My Aussie friend uses this recipe as her standard pancake recipe. Pikelets are the Scottish version of the southern British crumpet. They are also great for afternoon teas. Serve with fresh-squeezed lemon juice and sugar, or with butter and jam. I always thought that I had the best pancake recipe in the world until I tried these!

Tips:

  • To make sure your pikelets are fluffy, make sure you sift the flour before measuring it. This will help to aerate the flour and create a lighter batter.
  •
  • Be careful not to overmix the batter, as this can also make the pikelets tough. Mix just until the ingredients are combined.
  •
  • If you don't have buttermilk on hand, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using.
  •
  • To avoid splattering when you cook the pikelets, make sure your pan is hot before adding the batter. You should also use a non-stick pan to prevent the pikelets from sticking.
  •
  • Once you've cooked the pikelets, keep them warm in a preheated oven until you're ready to serve them. This will help to prevent them from drying out.

Conclusion:

Pikelets are a delicious and versatile breakfast or snack that can be enjoyed by people of all ages. By following these tips, you can make perfect pikelets every time. Serve them with your favorite toppings, such as butter, honey, jam, or fruit, and enjoy!
