This is based on a Filipino stew recipe called caldereta. It is usually served with rice. I suggest marinating the meat for at least 6 hours. The serving size for this recipe is 2 to 4 depending on how much bone the meat has. Serve over rice. Masarap!

Steps:
- Mix goat meat with vinegar, soy sauce, and garlic in a large bowl; cover and refrigerate from 1 to 8 hours. For best flavor, marinate at least 6 hours. Remove meat from marinade and pat dry with paper towels; reserve marinade and garlic cloves.
- Heat vegetable oil in a large pot over medium-high heat and brown the goat meat, working in batches if necessary, 10 to 15 minutes. Set goat meat aside. Cook and stir onion, red bell pepper, and garlic cloves from the marinade over medium heat until onion is translucent, about 5 minutes; pour in tomato sauce and bring mixture to a simmer. Allow to cook down slightly, about 5 minutes.
- Return goat meat to the sauce and pour in reserved marinade and beef stock. Bring to a boil, reduce heat to low, and simmer covered until goat meat is partially tender, 30 to 40 minutes. Stir in potato, carrots, and peas; season with salt, black pepper, and cayenne pepper. Simmer until goat meat is very tender and potato and carrots are cooked through, 20 to 30 more minutes. Adjust seasonings before serving.

Tips:
- Choose the right cut of goat meat: Goat shoulder or leg is best for stewing, as it has a good amount of fat and connective tissue that will break down and tenderize during cooking.
- Brown the meat before stewing: This will help to develop flavor and color. You can do this in a large pot or Dutch oven over medium-high heat.
- Use a variety of spices: Moroccan cuisine is known for its use of spices, so don't be afraid to experiment. Some common spices used in Moroccan goat stew include cumin, coriander, paprika, ginger, and turmeric.
- Add vegetables and dried fruit: Vegetables such as carrots, potatoes, and turnips are all good additions to Moroccan goat stew. Dried fruit such as apricots, raisins, and prunes can also add a touch of sweetness and complexity.
- Cook the stew low and slow: This will allow the meat to become tender and the flavors to meld together. Simmer the stew for at least 2 hours, or until the meat is fall-off-the-bone tender.
- Serve with couscous or bread: Couscous is a traditional Moroccan side dish that pairs perfectly with goat stew. You can also serve the stew with bread, such as pita or naan.
Conclusion:
Moroccan goat stew is a delicious and flavorful dish that is perfect for a special occasion or a weeknight meal. With its tender meat, aromatic spices, and hearty vegetables, this stew is sure to please everyone at the table. So next time you're looking for a new and exciting dish to try, give Moroccan goat stew a try. You won't be disappointed!
