Handed down from my great-grandmother, and one of my father's all-time favorite holiday treats. Store in the refrigerator (rolled in the cloth), and it will keep for weeks. Otherwise, it becomes hard and sugary.

DELICIOUS DATE LOAF

Delicious Date Loaf image

This recipe belongs to Anna Olson, a very famous Canadian chef. I reduced the original amount of sugar and oil just to make them it a little lighter. It works really well for muffins, too. I do not recommend the use of baking paper cups, because the muffins will stick to them.

Tips for Making the Perfect Date Loaf:

  • Use ripe dates: Ripe dates are softer and sweeter, which will give your loaf a better flavor and texture.
  • Chop the dates finely: This will help them to distribute evenly throughout the loaf and prevent them from clumping together.
  • Cream the butter and sugar together thoroughly: This will create a light and fluffy batter that will rise evenly in the oven.
  • Add the eggs one at a time: This will help to prevent the batter from curdling.
  • Stir in the flour gradually: This will help to prevent the batter from becoming too thick or lumpy.
  • Bake the loaf at the correct temperature and for the correct amount of time: This will ensure that the loaf is cooked through without becoming dry or overdone.

Mother's Date Loaf is a classic recipe that is perfect for any occasion. It is a moist and flavorful loaf that is sure to please everyone.
