Number Of Ingredients 10

½ pound ground beef
1 (15 ounce) can pinto beans, rinsed and drained
1 (15 ounce) can kidney beans, rinsed and drained
½ onion, cut into chunks
1 tablespoon chili powder
1 tablespoon grated Parmesan cheese
salt and ground black pepper to taste
2 (46 fluid ounce) cans tomato juice, or as needed
1 (4 ounce) packet saltine crackers, or as needed
1 cup pickle juice, or to taste

Steps:

  • Heat a large pot over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir pinto beans, kidney beans, onion, chili powder, and Parmesan cheese with the beef; season with salt and pepper. Pour enough tomato juice into the pot to cover the mixture by 1 inch.
  • Bring the mixture to a simmer and cook until the beans are heated through, about 10 minutes. Serve with crackers and pickle juice.

8 mild green chiles, such as Anaheim or Italian frying peppers

Steps:

  • In a large cast-iron or other heavy skillet, heat oil over medium-high. When oil is very hot, add chiles, working in batches if necessary. Cook, turning occasionally, until browned and blistered on all sides, about 10 minutes. Season with salt and serve.

MOM'S PERFECT CHILI



Mom's Perfect Chili image

Smoky tomato flavors lead the way in this comforting classic. This is the perfect chili recipe in my opinion--it's not so fancy that it's intimidating at all, but it's definitely a step above chili packet recipes and chili beans. Serve topped with desired garnishes, such as jalapeno, green or white white onion, cheese, sour cream, cilantro, and hot sauce.

1 tablespoon olive oil, divided
2 pounds ground beef sirloin
1 large onion, diced
2 medium poblano peppers, diced
1 medium orange bell pepper, diced
1 medium jalapeno pepper, seeded and chopped
3 cloves garlic, minced
¼ cup chili powder
4 teaspoons ground cumin
1 teaspoon ground paprika
1 teaspoon white sugar
1 teaspoon kosher salt
1 teaspoon black pepper
½ teaspoon garlic powder
¼ teaspoon cayenne pepper
½ teaspoon dried oregano
1 (12 fluid ounce) can or bottle beer
1 (28 ounce) can crushed tomatoes
1 (14.5 ounce) can fire-roasted diced tomatoes
½ (28 ounce) can tomato puree
2 cups beef stock
1 chipotle pepper in adobo sauce, minced
1 tablespoon adobo sauce from chipotle peppers
3 (15 ounce) cans kidney beans, drained and rinsed

Steps:

  • Heat 1 1/2 teaspoons oil in large Dutch oven over medium-high heat. Add ground beef and cook, crumbling with a spoon until evenly browned and cooked through, about 8 minutes. Drain and set aside.
  • Add remaining oil to the pot and return to medium-high heat. Add onion and saute, stirring often, until translucent, about 5 minutes. Add poblano, bell, and jalapeno peppers and garlic; cook, stirring frequently until softened, about 5 minutes.
  • Stir in chili powder, cumin, paprika, sugar, salt, pepper, garlic powder, cayenne, and oregano; cook for 1 minute. Add beer and stir, scraping any small brown bits from the bottom of the pot. Add crushed and fire-roasted tomatoes, tomato puree, beef stock, chipotle pepper, and adobo sauce; stir until well combined. Bring to a simmer, stirring often.
  • Stir in beef and kidney beans; return to a simmer. Cover, reduce heat to low, and simmer, stirring occasionally, for at least 3 hours.

MAVERICK MOOSE CHILI

This is a chili I have been making for years. I have made it with all kinds of ground meats (beef, turkey, deer, elk) but I prefer ground moose. The longer you let it simmer the better as the flavors will blend. Top with shredded cheddar cheese. Serve with fresh baked cornbread and sweet honey butter. Men LOVE this meal!

1 white onion, chopped

1 (28 ounce) can hot chili beans
1 (15 ounce) can kidney beans or 1 (15 ounce) can black beans
1 (10 ounce) can condensed tomato soup
2 (10 ounce) cans diced tomatoes
1 (6 ounce) can tomato paste
2 green bell peppers, diced
1 large white onion, diced
1 (10 ounce) carton white mushrooms, sliced
2 cups frozen corn
1 lb lean ground beef (you can leave the meat out completely if you prefer) or 1 lb ground turkey (you can leave the meat out completely if you prefer)
2 teaspoons garlic powder
4 -6 tablespoons cumin
1 tablespoon chili powder
1 teaspoon kosher salt
1 teaspoon black pepper
2 tablespoons dried basil
3 -4 tablespoons Tabasco sauce (more or less, depending on how hot you like it)

Steps:

  • In a large pot, brown ground beef/turkey and drain off the juices. Throw in onion and bell peppers near the end of the cooking time to allow to them soften, along with 1/2 teaspoon garlic powder, 1/2 teaspoon kosher salt, and 1/2 teaspoon black pepper.
  • Combine chili beans, kidney/black beans, condensed tomato soup, canned diced tomatoes, and corn into the same pot and bring to a simmer.
  • Add the remaining 1.5 teaspoons garlic powder, 1/2 teaspoon kosher salt, 1/2 teaspoon black pepper, dried basil, cumin, and Tabasco. Stir well.
  • Feel free to adjust spices and seasoning to your liking.
  • Serve and enjoy!
