1/3 cup sugar
2 large egg yolks, room temperature
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/8 teaspoon salt
MERINGUE:
2 large egg whites, room temperature
1/8 teaspoon cream of tartar
1/3 cup sugar
3/4 cup finely chopped pecans
1 cup apricot preserves

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour and salt; beat into creamed mixture. Spread into a greased 13x9-in. baking pan. Found this recipe in Maw Maw's Old Church Cookbook and have enjoyed making it ever since. A very simple but good recipe. They are not like the mud bar that has chocolate on top. Has the taste and texture of what grandma use to make.

1/2 c butter, room temperature
1 c granulated sugar
3 eggs
1,1/2 c all purpose flour
1 tsp baking powder
1/4 tsp salt
1 c pecans, chopped
1/2 c chocolate chips
1 c marshmallows (small)
1 c brown sugar

Steps:

  • 1. Preheat oven to 350 degrees. Beat together the granulated sugar and butter until creamy. Beat in 1 whole egg and 2 egg yolks (put aside the whites for later). In a separate bowl, mix together the flour, salt and baking powder. Add to the butter mixture and mix well. Spread into 9x13" pan. Bake the crust for 5 minutes before adding marshmallows. Let cool and then sprinkle with marshmallows, nuts and chocolate chips.
  • 2. Beat egg whites until stiff peaks form. Fold in the brown sugar.
