NUT AND FRUIT BREAD

This is another great holiday bread to make that belonged to my mother. She sometimes served this one, and it is a very old recipe. This bread is good the first day, but better the second. You may use dates instead of raisins if you wish.

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful your bread will be.
  • Don't overmix the batter. Overmixing can make the bread tough.
  • Let the bread cool completely before slicing and serving. This will help the bread to hold its shape.
  • Store the bread in an airtight container at room temperature for up to 3 days, or in the freezer for up to 2 months.
  • For a healthier bread, use whole wheat flour instead of all-purpose flour. You can also add in some chopped nuts or seeds for extra crunch and flavor.
  • If you don't have any bananas on hand, you can substitute applesauce or pumpkin puree.
