1 Cup Peeled and Diced Apples (Approx 2 apples)
1 Cup White Sugar
125 Grams Butter
1 Egg
1 1/2 Cups Flour
1 teaspoon Baking Powder
1/2 teaspoon of Salt
1/2 teaspoon Mixed Spice
1 teaspoon Ground Cinnamon
1/2 cup Walnuts, roughly chopped
1 Cup Sultanas or Raisins

Steps:

  • Prepare a 20 or 23cm cake tin with cooking spray or butter or line with baking paper
  • Preheat Oven to 180 Degrees
  • In a medium mixing bowl, add the peeled and diced the apples
  • Add to this the sugar, mix to coat and set aside while you prepare the next step
  • In a small bowl, melt the butter then add the egg and beat well.
  • Add this to the apple mixture.
  • Then add in the flour, baking powder, salt, mixed spice, cinnamon and blend until just combined
  • Add the walnuts and sultanas and mix carefully
  • Pour this batter into the prepared cake tin and bake for 50-60 minutes
  • Allow to cool for at least 10 minutes before turning out onto a wire rack.

4 large eggs, at room temperature
2 cups all-purpose flour
1 cup almond flour
1 1/2 teaspoons baking powder

1/2 teaspoon kosher salt
1 1/2 cups buttermilk, at room temperature
3 tablespoons powdered sugar

Steps:

  • For the apples: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch glass baking pan.
  • Mix together the apples, granulated sugar and cinnamon in a medium bowl. Set aside.
  • For the cake: Combine the butter and granulated sugar in a large bowl. Using a hand-held mixer, beat on medium high until light and fluffy, about 3 minutes. 3 apples - peeled, cored and chopped
½ cup raisins

1 egg
1 1/2 cups flour
