BEEF AND MUSHROOMS WITH SMASHED POTATOES
I was inspired to make this recipe after I couldn't stop thinking of a similar dish served in my elementary school cafeteria more than 50 years ago! I like that it's quick to make, and my husband and grandchildren love it. -Ronna Farley, Rockville, Maryland

SALISBURY STEAK WITH MUSHROOMS
A great from-scratch salisbury steak and gravy recipe I found a long time ago. The mushroom and onion gravy is wonderful over mashed potatoes or rice. The gravy is still good without mushrooms. I've made it for my husband that way.

MUSHROOMS AND ONIONS FOR STEAK
This is how I sauté mushrooms and onions to serve with grilled steak. I've been doing it this way for years and never really thought of it as a recipe until today when my husband mentioned that it was the best he'd ever had. If you have leftovers, make an omelet with them with smoked swiss cheese and serve with hot, steaming bowls of tomato soup with basil. Just trust me on that.

GROUND BEEF & MUSHROOMS SKILLET
This is a great, fast, and easy recipe, with minimal cleanup. It's a very hearty dish, which is great for a cold winter day. NOTE: My recipes are notoriously salty, since I'm a salt-o-holic, so you may want to adjust the ingredients to satisfy your own sodium intake.

Tips:
- Use a large skillet or Dutch oven to ensure that the beef and vegetables have enough space to cook evenly.
- Season the beef liberally with salt and pepper before browning. This will help to develop flavor and prevent the beef from becoming bland.
- Cook the beef in batches if necessary to avoid overcrowding the pan. Overcrowding can cause the beef to steam instead of brown.
- Cook the beef until it is browned on all sides. This will help to seal in the juices and prevent the beef from becoming dry.
- Add the mushrooms and onions to the skillet and cook until they are softened. This will typically take about 5-7 minutes.
- Add the beef broth, Worcestershire sauce, and thyme to the skillet and bring to a boil. Reduce heat to low and simmer for 15-20 minutes, or until the beef is cooked through.
- Serve the beef and vegetable skillet over mashed potatoes, rice, or noodles.
Conclusion:
Mushroom and onion beef skillet is a quick and easy weeknight meal that is packed with flavor. The beef is tender and juicy, the mushrooms and onions are savory and caramelized, and the sauce is rich and flavorful. This dish is sure to please the whole family.
