2 boneless chicken breasts
4 ounces portabella mushrooms, coarsely chopped
3 cups white wine
2 tablespoons butter, for frying
1 cup spinach
3 tablespoons ground coriander, divided use
salt, to taste
1/4 cup flour, to coat

Steps:

  • Marinate chicken in wine for a minimum of ½ hour.
  • Then, remove the chicken from the marinade and pound it as flat as you can.
  • Preheat oven to 350 degrees.
  • Place butter and mushrooms in a frying pan.
  • Heat mushrooms thru.
  • Add cleaned, stemmed spinach, stir and cover.
  • Turn off heat.
  • Three minutes later, check the mushroom mixture and add some salt and 1 tbsp coriander, adjusting to taste.
  • Place ½ of mushroom mixture on one end of a flattened chicken breast.
  • Roll the chicken breast up.
  • Try to tuck in the ends.
  • Repeat with 2nd chicken breast.
  • On a plate, mix flour, 2 tbsp coriander and ¼ tsp salt.
  • Carefully dredge the chicken rolls in the flour mixture.
  • Brush off any excess flour.
  • Place the chicken in a small baking dish and bake for about 40 min, or until the chicken reaches an interior temperature of 188 degrees or juices stop running.
  • The outside of the rolls should by golden brown.
  • Slice carefully and arrange on a plate.
  • Serve with the remainder of the wine you chilled after using 3 c for a marinade, (you did chill it, didn't you?) a side of rice pilaf, and a small loaf of fresh brown bread with flavored butter.

4 slices bacon
1 small onion, finely chopped
1 (10 ounce) can mushrooms, drained and finely chopped
4 ounces cream cheese
14 slices bread
1/4 cup butter, melted

Steps:

  • In a skillet, cook bacon, onions and mushrooms until tender.
  • Add cheese,combine and set aside.
  • Trim crusts from bread and flatten slices slightly with rolling pin.
  • Spread each slice with approximately 2 Tbsp of mixture.
  • Roll up jelly roll fashion and secure with toothpicks.
  • Place seam side down on parchment lined baking sheet.
  • Cover and chill for at least 1 hour or freeze in a single layer.
  • Place frozen roll-ups in a sealed bag and return to freezer.
  • Let frozen roll-ups stand at room temperature for 30 minutes before baking. Brush rolls with melted butter.
  • Bake in a 375*oven for 10-15 minutes or until lightly brown.
  • Remove toothpicks and slice in half. Serve warm.

1 stick (8 tablespoons) unsalted butter, at room temperature
1 tablespoons chopped fresh basil
1 tablespoon chopped fresh parsley
2 cloves garlic, grated or minced
Kosher salt and freshly ground black pepper
10 ounces sliced baby bella mushrooms
1/2 baguette, cut into 1/4-inch rounds
4 boneless, skinless chicken breasts, halved lengthwise and pounded 1/4 inch thick
1 cup grated mozzarella
1/4 cup mayonnaise
1/2 cup grated Parmesan
4 cups baby spinach
1 pound asparagus, steamed, blanched or sauteed, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix together the butter, basil, parsley and garlic in a small bowl. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Heat a 9- or 10-inch cast-iron skillet over medium-high heat. Melt 2 tablespoons of the compound butter in the skillet. Add the mushrooms and cook, stirring occasionally, until the mushrooms are browned and have released their liquid, 3 to 4 minutes. Transfer the mushrooms to a bowl and set aside.
  • Melt 2 more tablespoons of the compound butter in the skillet. Remove from the heat and cover the bottom of the skillet with baguette rounds. Place in the oven and bake until the bottoms are browned and toasted, 15 to 20 minutes.
  • Meanwhile, place the chicken breasts flat on a work surface. Sprinkle both sides lightly with salt and pepper. Mix together the mozzarella, mayonnaise and 1/4 cup of the Parmesan in a medium bowl. Spread a heaping tablespoon of the mixture on a chicken breast with a spatula or spoon. Top the mixture with 6 to 7 spinach leaves and a few mushrooms. Roll up the chicken, starting with the narrowest side to create a short, thick roll. Cut the roll in half crosswise. Repeat with the remaining chicken breasts and filling.
  • Remove the skillet from the oven. Flip the baguette rounds. Arrange the chicken cut-side up on top of the toasted baguette rounds. Add a few pats of compound butter on top of the chicken. Sprinkle the rounds with the remaining 1/4 cup Parmesan and bake until the chicken is fully cooked, 40 to 45 minutes.
  • Top the asparagus with any remaining compound butter and serve with the roll-ups.

1 chicken breast, cooked and shredded
1 (8 ounce) refrigerated crescent dinner rolls
1 (3 ounce) cream cheese
1/2 cup butter, melted
1 1/2 cups seasoned stuffing mix (Pepperidge Farm)
1/4 cup water
1/4 cup sour cream
1 (10 ounce) cream of mushroom soup

Steps:

  • Melt cream cheese slightly in a microwave. Mix with shredded chicken.
  • Separate rolls. Start at widest part of rolls and spread with chicken mixture. Roll up and seal at point.
