An all time favorite of mine, I got this recipe from Allrecipes posted by Suki. It's fast and easy to make and tastes fantastic. Crusty rolls for mopping up the juices is all that's needed to finish the meal. I use lots more of the red pepper flakes to add zing and probably more feta as well since it's my favorite cheese. It's a real filling dinner for those nights when we want to eat vegetarian and DH requests this one frequently.

1 (8 ounce) package penne pasta
2 tablespoons olive oil
1/2 cup chopped onion
1 garlic clove, minced
3 cups chopped tomatoes
1 cup sliced fresh mushrooms
2 cups spinach leaves, packed
salt and pepper
1 pinch red pepper flakes
8 ounces feta cheese, crumbled

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente; drain.

1 cup bread crumbs
1 (16 ounce) package sliced fresh mushrooms
3 eggs, beaten
3 ounces crumbled feta cheese
3 tablespoons lemon juice
water, or as needed

  • Heat oil in a small saucepan to 375 degrees F (190 degrees C).

4 ounces uncooked angel hair pasta
1/2 pound sliced fresh mushrooms
1/2 cup chopped onion
1-1/2 teaspoons minced garlic
2 tablespoons butter
1/4 cup white wine or chicken broth

1 package (4 ounces) crumbled tomato and basil feta cheese

In 2018, Finnish blogger Tiiu Piret (@tiiupiret) shared a recipe for a pasta containing prosecco, baked feta and tomatoes. In 2019, another Finnish blogger, Jenni Häyrinen (@liemessa), shared her simplified version of the dish on her blog and Instagram using the hashtag #uuifetapasta. (Afterward, sales of feta in Finland apparently increased by 300 percent.) American food influencer MacKenzie Smith (@grilledcheesesocial) eventually heard about the dish from a friend with a Finnish boyfriend. In January 2021, she posted a translation of the popular recipe on her blog and Instagram, which led to it going viral in the United States. It's easy to see why the recipe has achieved such fame: Cherry tomatoes and a whole block of feta are baked until soft and melty, then tossed with garlic, basil and cooked noodles for a beautifully cheesy dish. 1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

Use the back of a spoon to smash the tomatoes and feta into a smooth and creamy sauce (it's okay if some of the oil isn't fully integrated). Add the pasta and half the basil and toss until evenly coated. If the sauce is too thick, stir in some pasta water a couple tablespoons at a time. Taste and adjust the seasoning with salt and pepper. Serve topped with the remaining basil and a pinch of sea salt.

Great meatless meal or cut up and saute a chicken breast or two to switch it up. I created this recipe myself tonight. Sounded like a good blend so decided to try it. Putting it down to save , but thought I would share as well. I served this with garlic bread . It would be good with a green salad as well. I like to season with Mrs. Dash low sodium seasoning as we are trying to watch our sodium. I also use Smart balance Buttery Spread in place of the butter. Amounts are just estimates. You can add more or less of what you like for your own taste.

12 ounces of bowtie pasta
1 medium onion
6 ounces sliced mushrooms
4 ounces of sliced olives
5 ounces reduced fat feta cheese

  • add 1 tablespoon butter to pasta and toss , add contents of frying pan.
  • mix well.
  • Sprinkle with parmesan cheese.
