MUSHROOM-HERB MEAT LOAF EICH

Yield Serves 4

Number Of Ingredients 15

1 small onion
1/4 pound mushrooms
1 medium red bell pepper
1 large garlic clove
1 tablespoon unsalted butter
1 pound ground chuck
1/2 pound ground pork or veal
1/2 cup fine fresh bread crumbs
1/2 cup chopped fresh parsley leaves
2 teaspoons dried basil, crumbled
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/4 teaspoon cayenne
4 bacon slices
Accompaniment: bottled ketchup-style chili sauce such as Heinz, or ketchup

Steps:

  • Preheat oven to 350°F. Chop onion and mushrooms. Finely chop bell pepper and mince garlic. In a heavy skillet cook onion, mushrooms, bell pepper, garlic, and salt and pepper to taste in butter over moderate heat, stirring, until bell pepper is tender and all liquid given off by mushrooms is evaporated. Transfer vegetables to a bowl and add chuck, pork or veal, bread crumbs, herbs, salt, and spices, stirring until just combined well.
  • In a shallow baking pan form mixture into an 8 x 4-inch oval loaf and arrange bacon slices lengthwise over top. Bake meat loaf in middle of oven 50 to 60 minutes, or until a meat thermometer inserted in center registers 160°F. Let meat loaf stand 10 minutes before slicing.
  • Serve meat loaf with chili sauce or ketchup.

Tips:

  • Choose the right mushrooms. Cremini or white button mushrooms are the best choice for this recipe, as they have a mild flavor and firm texture. Avoid using wild mushrooms, as they can have a strong flavor that can overpower the other ingredients in the meatloaf.
  • Don't overcook the mushrooms. Mushrooms release a lot of water when they are cooked, so it's important to not overcook them. Otherwise, they will become mushy and the meatloaf will be too wet.
  • Use a good quality ground beef. The quality of the ground beef will make a big difference in the flavor of the meatloaf. Choose a ground beef that is at least 80% lean, and make sure it is fresh.
  • Season the meatloaf well. Don't be afraid to season the meatloaf generously. A good combination of salt, pepper, garlic powder, and onion powder will give the meatloaf a lot of flavor.
  • Bake the meatloaf in a loaf pan. This will help the meatloaf to hold its shape and cook evenly.
  • Let the meatloaf rest before slicing. Once the meatloaf is done baking, let it rest for 10-15 minutes before slicing. This will help the juices to redistribute and make the meatloaf easier to slice.

Conclusion:

Mushroom meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover mushrooms. With its savory flavor and moist texture, this meatloaf is sure to be a hit with the whole family.
