- Wash, trim and thinly slice scallions. Pit olives.
- Whisk oil, vinegar and mustard in a large bowl.
- When green beans and mushrooms are cooked, drain.
- Cut beans in half, and add to dressing along with mushrooms, olives and scallions. Mix well.
