SPANISH MARINATED MUSHROOMS

I had some amazing marinated mushrooms in a little tapas bar in Seville when I was stationed in Spain with the U.S. Navy. A couple of months ago, I decided to see if I could make something close, and here's what I came up with. The longer you keep them refrigerated, the stronger the vinegar taste will be. -Patricia Mitchell, Ingleside, Texas

Tips:

  • Choose the right mushrooms. Cremini, shiitake, and oyster mushrooms are all good choices for this recipe.
  • Use fresh, ripe tomatoes. This will give the sauce a bright, vibrant flavor.
  • Don't overcrowd the pan. If you add too many mushrooms to the pan, they will steam instead of sautéing. Cook them in batches if necessary.
  • Cook the mushrooms until they are tender but still have a little bit of bite. Overcooked mushrooms will be mushy and flavorless.
  • Use a good quality olive oil. This will add a rich, nutty flavor to the sauce.
  • Season the sauce to taste. Add salt, pepper, and other spices to taste.
  • Serve the mushrooms with rice, pasta, or bread. They can also be used as a topping for pizza or grilled meats.

Conclusion:

This recipe for mushrooms with spicy Spanish sauce is a quick and easy way to enjoy a delicious and healthy meal. The mushrooms are sautéed in a flavorful sauce made with tomatoes, onions, garlic, and spices. The sauce is slightly spicy, but it can be adjusted to your liking. Serve the mushrooms with rice, pasta, or bread, and enjoy!
