BASIL CREAM SAUCE
After a mad search on the net for a recipe for this sauce I had to create my own. This can be reheated in the microwave without the usual cream sauce defects. I just love the light green color and how well it displays over tri color or regular pasta, salmon and grilled chicken. I have been putting this on everything.

Tips:
- To ensure the mussels are fresh, gently tap their shells; if they close, they are alive and suitable for cooking.
- Soak the mussels in cold water for at least 30 minutes before cooking to remove any sand or grit.
- Use a large pot to cook the mussels, as they will expand during cooking.
- Do not overcrowd the pot, as this will prevent the mussels from cooking evenly.
- Add white wine to the pot to enhance the flavor of the mussels.
- Cook the mussels until they have opened, about 5-7 minutes. Discard any mussels that do not open.
- Serve the mussels immediately with a dipping sauce, such as a basil cream sauce.
