Steps:
- Stir together the sugar, salt, pepper, cumin, and mustard in a small bowl. Press the sugar mixture evenly onto the top surface of the fish.
- Heat the oil in a large nonstick skillet over medium heat. Cook the fish, rub side down, for 4 minutes or until the rub dissolves and darkens slightly (being careful not to burn). Flip the fish and cook for 3 minutes or until the fish is opaque.
- This is awesome on the grill. DO NOT OVERCOOK THE FISH!

- 1. Stir together sugar,mustard,salt,cumin and pepper in small bowl. Unwrap fish and leave it on paper you bought it in, placing it so side that had skin is down. Press Rub mixture evenly onto fish.
- 2. Heat oil in large nonstick or cast-iron skillet over medium heat. When hot, place fish rub-side down in pan. Cook until rub dissolves and darkens slightly (being careful not to burn), about 4 minutes. Flip fish and cook to medium doneness, about 1 minute.
