Every BBQ novice (experts, too) should buy Mike Mills' book "Peace, Love, & BBQ" for recipes and BBQ lore... what a fun read and window into many regional favorites. Mike is certainly confident (and its justified): he declares that HIS Carolina Style Mustard BBQ Sauce would be used by the legendary Maurice Bessinger (SC BBQ restauranteur) if only he had it! I told this to my neighbor who likes mustard sauces & has been known to frequent Maurice's establishments when I gave him a sample made according to Mike's recipe. Later on he informed me that Mike could be right... he liked Mike's Sauce better than Maurice's. Moreover, he wanted the recipe! I have tweeked the recipe a bit and love this sauce better than all other mustard-based sauces I have tried. It is also delicious on HAM sandwiches & sausage biscuits!

- Once the sauce is simmering, whisk until the sugar dissolves completely. This should take 5 minutes or less.
- Do not overcook (sauce requires less time simmering if sugar substitue is used).

- Optional: in place of the light brown sugar, use 1/2 cup of sugar substitute + 1T molasses. The sugar substitute version (which I now keep on hand) is diabetic friendly & easier to adapt to sugar substitute than most tomato based sauces I have attempted to modify & encountered consistency problems.

- In a medium saucepot on medium-high heat, add the mustard, beer or tea, cane syrup, hot sauce, white vinegar, Worcestershire sauce, garlic, a pinch of salt and plenty of grinds of black pepper. Simmer until slightly thickened, about 30 minutes.
- Heat a grill for indirect cooking to 375 degrees F.
- Place the wings on a wire rack, then top with a second wire rack and secure with wire on both sides. Sprinkle on both sides with salt, pepper and a dusting of paprika. Place on the grill over the indirect heat, meat-side down. Close the grill and cook for about 15 minutes. Baste with the sauce, then flip the wings and brush with more sauce. Continue to grill until the wings are golden and the sauce is set and sticky, about 15 minutes more. Serve with the bread and pickles.

PULLED PORK SLIDERS WITH MUSTARD BBQ SAUCE AND PICKLED ONIONS

- FOR THE ONION:
- In a medium pot, combine all ingredients except onions with 3/4 cup water. Bring to a boil, add the onions, and remove from heat. Let sit until cooled, about 1 hour. Serve with sliders.
- FOR THE MUSTARD BBQ SAUCE:
- In a small saucepan over medium heat, whisk all the ingredients together. Cook for 5 minutes and remove from heat.
- FOR THE SLIDERS:
- Place a heaping tablespoon of pulled pork on the bottom halves of the rolls. Drizzle with the barbecue sauce, top with some of the pickled red, and place the remaining roll halves on top.
- Place the onions in the bottom of a 5-quart slow cooker. Place the pork shoulder, fat and skin side up. in the slow cooker. In a medium bowl stir together soy sauce, garlic, salt pepper and orange marmalade. Pour mixture over the pork. Cover and cook on low for 8 hours.
- Remove shoulder to a serving platter and let rest for 5 minutes. Break up some of the meat with a fork and arrange on platter. Leave the rest of the meat on the bone to keep it warm and moist and let your guest pull it off the as they need it.
- Wrap the tortillas in damp towels, 10 to a towel and microwave on high for 30 seconds. Set out pork and tortillas with Cabbage Slaw and have guests assemble their own tacos.
- Combine shredded cabbage and grated carrots in a large bowl. Add vinegar, salt, and pepper and toss to combine. Cover with a damp towel and let sit in refrigerator for at least 1 hour or up to 8 hours. Use as topping for pulled pork tacos.
