MUSTARD & ONION RELISH
Serve hot or cold with sausages, burgers, steak or anything else you have on your BBQ. I was clearing out all the supermarket recipe leaflets and cards and all the cut out recipes that kept piling up in my kitchen. I thought I'd post the ones that I liked the look and sound of here, to share and for future reference. This way you might find something you like and my kitchen gets decluttered! If you try it before me let me know what you think. From Tesco's 'Food Club' magazine.

Steps:
- Bring vinegar, brown sugar, salt, mustard powder, and 1/2 cup water to a boil in a medium pot over high heat, stirring occasionally, until sugar and salt dissolve, about 5 minutes.
- Place cucumber, onion, raisins, and mustard seeds in a heatproof resealable container. Pour hot brining liquid over cucumber mixture; stir to combine. Let cool to room temperature, then cover and chill at least 2 hours before serving. Serve cool or at room temperature.
Tips:
- Choose the right mustard. Yellow mustard seeds are the most common type used in relish, but you can also use brown or black mustard seeds for a spicier flavor.
- Use fresh vegetables. Fresh vegetables will give your relish the best flavor and texture.
- Chop the vegetables finely. This will help the relish to blend together and distribute the flavors evenly.
- Use a food processor to make quick work of chopping the vegetables.
- Add sugar or honey to taste. This will help to balance out the acidity of the vinegar.
- Use a clean, sterilized jar to store the relish. This will help to prevent spoilage.
Conclusion:
Mustard relish is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is easy to make at home with fresh vegetables and a few simple ingredients. With a little planning and preparation, you can enjoy homemade mustard relish all year long.
