GREEN BEANS WITH MUSTARD SEEDS, CASHEWS AND COCONUT

Green Beans With Mustard Seeds, Cashews and Coconut image

This fragrant, deeply flavored green bean dish works as an intense side dish for a simple meal or as a meatless main course in its own right. Take care when adding the mustard seeds to the skillet - they can pop and jump out of the pan as they heat, so stand back. If you can't find large flakes of dried coconut (also sometimes called chips), you can substitute shredded coconut, as long as it's unsweetened. But ground coconut will be too fine to add the necessary texture.

Time 30m

Yield 4 servings

Number Of Ingredients 14

1/2 cup unsweetened coconut flakes or chips
2 1/2 tablespoons coconut oil
2 garlic cloves, finely chopped
2 (1/4-inch-thick) coins fresh ginger
1 teaspoon mustard seed
1 teaspoon turmeric
Large pinch red pepper flakes
1 bay leaf
5 large basil leaves, sliced into ribbons
1 pound green or wax beans, trimmed
3/4 teaspoon kosher salt, or to taste
1/3 cup chopped roasted cashews (salted or unsalted, to taste)
Cooked rice, for serving
Lime wedges, for serving

Steps:

  • Place a large, dry skillet over medium-high heat. Add coconut flakes and toast, shaking pan occasionally, until golden, about 5 minutes. Transfer flakes to a bowl.
  • Heat oil in the same skillet. Add garlic, ginger, mustard seed, turmeric, red pepper flakes and bay leaf. Cook, stirring, 1 minute.
  • Stir in basil, green beans and salt. Toss well to coat in oil and seasonings.
  • Add 1/3 cup water, cover partly and reduce heat to medium. Cook until beans are tender, about 8 minutes. Uncover and continue cooking until most of the liquid has evaporated and the beans are wilted and lightly colored. Toss in cashews and coconut flakes. Serve over rice, with lime wedges.

Mustard-Crusted Beef Tenderloin with Arugula, Red Onion, and Wax Bean Salad image

Categories     Salad     Beef     Mustard     Roast     Picnic     Salad Dressing     Vinegar     Arugula     Summer     Gourmet

Yield Makes 2 servings

Number Of Ingredients 17

For beef
1/4 cup coarse-grain mustard
3/4 teaspoon dry mustard
2 1/4 teaspoons packed dark brown sugar
3/4 teaspoon coarsely ground black pepper
1/2 teaspoon finely grated fresh lemon zest
1 (1-lb) trimmed beef tenderloin roast, tied
1 tablespoon vegetable oil
For salad
1 small red onion (1/4 lb), thinly sliced
1/2 lb wax or green beans, cut diagonally into 2-inch pieces
4 oz baby arugula (4 cups)
For dressing
1 1/2 tablespoons balsamic vinegar
1 tablespoon fresh lemon juice
1/4 teaspoon Dijon mustard
1/4 cup olive oil

Steps:

  • Prepare beef:
  • Preheat oven to 425°F.
  • Stir together mustards, brown sugar, pepper, and lemon zest.
  • Pat beef dry and season generously with salt. Heat oil in a heavy skillet over moderately high heat until just beginning to smoke, then brown beef on all sides, about 2 minutes total.
  • Transfer to an oiled shallow baking pan and coat with mustard mixture.
  • Roast beef in middle of oven until a thermometer inserted 2 inches into thickest part of meat registers 125°F for medium-rare, 15 to 20 minutes. Transfer to a cutting board and let stand until cool, at least 45 minutes.
  • Prepare salad while beef is roasting:
  • Chill onion slices in water to cover 30 minutes. Cook beans in boiling salted water until crisp-tender, about 5 minutes. Drain beans in a colander and rinse under cold water to stop cooking, then transfer to a large bowl. Add arugula to beans. Drain onion slices and pat dry.
  • Make dressing and toss salad:
  • Whisk together vinegar, lemon juice, mustard, and salt and pepper to taste. Add oil in a slow stream, whisking until emulsified.
  • Cut beef into thin slices.
  • Add onion slices, beef, and enough dressing to arugula and beans to just coat and toss to combine well.

Tips:

  • Choose fresh, tender wax beans. Look for beans that are bright green and snap easily when you bend them.
  • Trim the wax beans. Remove the ends of the beans and any strings that may be present.
  • Blanch the wax beans. This helps to preserve their color and crispness. To blanch the beans, bring a large pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are bright green and tender. Immediately remove the beans from the boiling water and plunge them into a bowl of ice water to stop the cooking process.
  • Make the mustard sauce. While the beans are blanching, make the mustard sauce. In a small bowl, whisk together the Dijon mustard, mayonnaise, vinegar, sugar, salt, and pepper.
  • Combine the beans and the sauce. Once the beans are blanched and cooled, drain them well and add them to a large bowl. Pour the mustard sauce over the beans and toss to coat. Serve immediately or chill for later.

Conclusion:

Mustard wax beans are a delicious and versatile side dish that can be enjoyed hot or cold. They are perfect for potlucks, picnics, and summer barbecues. With their bright green color and tangy mustard flavor, they are sure to be a hit with everyone who tries them.
