2 cups torn curly or Belgian endive
2 cups torn radicchio
2 cups chopped rotisserie chicken
1/2 cup sliced radishes
2 tablespoons chopped red onion

DRESSING:
2 tablespoons olive oil
1/4 teaspoon grated lemon zest
1 tablespoon lemon juice
1 tablespoon mint jelly
1 garlic clove, minced
1/4 teaspoon salt

Toasted pine nuts, optional

Steps:

  • In a large saucepan, bring 1/2 in. of water to a boil. Add peas; cover and cook 5-8 minutes or until tender., Drain peas; place in a large bowl. Add endive, radicchio, chicken, radishes, onion and mint. In a small saucepan, combine oil, lemon zest, juice, jelly, garlic, salt and pepper; cook and stir over medium-low heat 4-6 minutes or until jelly is melted. Drizzle over salad; toss to coat. 1/4 cup plus 2 tablespoons extra-virgin olive oil

1 1/2 teaspoons za'atar (middle eastern spice blend), plus more for sprinkling
3 tablespoons red wine vinegar
1/2 teaspoon honey
1 small shallot, thinly sliced into rings and separated
2 cups shredded roast chicken
1 5-ounce package mesclun greens
1 cup sugar snap peas, trimmed and thinly sliced
1 cup fresh parsley
1/2 cup crumbled feta cheese

Steps:

  • Put a baking sheet on the middle oven rack and preheat to 450˚. Pat the chickpeas dry with paper towels; toss with the carrots, 2 tablespoons olive oil, 2 pinches of salt and a few grinds of pepper in a large bowl. Spread on the hot baking sheet and roast, stirring halfway through, until the chickpeas are browned and crisp and the carrots are tender, 30 to 35 minutes. Sprinkle with 1 1/2 teaspoons za'atar and toss to coat. Let cool slightly.
  • Meanwhile, stir the vinegar, honey, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl; let sit 10 minutes. Gradually whisk in the remaining 1/4 cup olive oil.
  • Remove the carrots to a cutting board and cut into 2-inch pieces; transfer to the bowl with the dressing. Add the chicken, mesclun, snap peas, parsley and feta. Season with salt and pepper and toss gently. Top with the roasted chickpeas and sprinkle with more za'atar.

4 sprigs tarragon, plus 2 tbsp minced tarragon leaves (divided)
1 lb chicken breast, boneless and skinless
2 large shallots, 1 halved, 1 minced
2 garlic cloves, 1 smashed, 1 minced
kosher salt
black pepper, freshly ground, to taste
3/4 cup plain Greek yogurt
3 tablespoons olive oil
1/2 lb sugar snap pea, stringed and thinly sliced
1 cup fresh English pea (may use thawed frozen ones)
1/2 cup snow peas, stringed and thinly sliced
1/8 cup flat leaf parsley, finely chopped
1/4 cup fresh chives, finely chopped
2 teaspoons lemon zest, finely grated
1 tablespoon fresh lemon juice (may add more to suit your taste)
8 slices bread, toasted
8 lettuce leaves

Steps:

  • Place the tarragon sprigs, chicken, the halved shallot, and the smashed garlic into a medium saucepan. Add water to cover by 1 inch and season with salt and pepper. Bring the water to a boil; remove the pan from heat, cover, and let it stand until the chicken is just cooked through. This takes 15 to 25 minutes depending on the size of your chicken breast. If I have a large one, I'll usually let it actually boil for 3 or 4 minutes before removing from the heat.
  • Transfer the chicken to a plate and let it cool. Shred or dice the chicken.
  • While the chicken is poaching, whisk the yogurt, oil, minced shallot, and minced garlic in a small bowl. Season the dressing with salt and pepper to taste.
  • Combine all the peas in a medium bowl. Add the chicken, dressing, minced tarragon, parsley, chives, lemon zest, and 1 tbsp lemon juice; toss to coat. Season to taste with salt, pepper, and additional lemon juice, if desired. Serve spooned over toasted bread and/or lettuce leaves.

6 cups water
⅓ cup tarragon vinegar
3 tablespoons Dijon mustard

½ teaspoon crushed red pepper flakes
⅔ cup safflower oil
3 cups cubed cooked chicken

Steps:

  • Bring the wild rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender but not mushy, 20 to 45 minutes depending on the variety of wild rice. Drain off any excess liquid, fluff the rice with a fork, and cook uncovered 5 minutes more. Scrape into a mixing bowl, and refrigerate until cold.
  • Whisk the vinegar, mustard, sugar, salt, garlic, dried tarragon, black pepper, and red pepper flakes in a small mixing bowl until smooth. Pour the safflower oil into the dressing in a thin, steady stream while whisking vigorously until the oil has been fully incorporated into the dressing; set aside. Stir the chicken, celery, parsley, and green onion into the cooled wild rice. Stir in the dressing until evenly blended. Cover the rice mixture, and refrigerate 4 hours to overnight.
  • Bring a small saucepan of lightly salted water to a boil. Add the sugar snap peas, and cook uncovered until just tender, about 30 seconds. Drain in a colander, then immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the peas are cold, drain and cut into 1-inch diagonal pieces. Refrigerate until ready to serve. Stir the peas and toasted almonds into the rice mixture just before serving.

1 pound chick peas (garbanzos), soaked overnight in water to cover
2 cloves garlic, minced
Coarse salt and freshly ground pepper to taste
1 yellow pepper
1 red pepper
2 tablespoons fennel seeds
2 tomatoes, seeded and chopped
1 red onion
3/4 tablespoon curry powder
1/4 cup balsamic vinegar
1/2 cup extra-virgin olive oil
1/2 cup chopped cilantro leaves
Chili oil (optional), passed separately

Steps:

  • Drain the soaked chick peas and add fresh water to cover. Add the garlic, salt and pepper and simmer the chick peas for an hour to an hour and a half or until they are tender. Drain and cool.
  • Meanwhile, char the peppers, skin side toward the heat, under a broiler or on a grill. Put them in a paper bag, seal them and allow them to cool a few minutes. Peel off their skins and cut them into strips.
  • Toast the fennel seeds in a small frying pan. Crush the seeds with a mortar and pestle.
  • Combine the chick peas, tomato, onion and crushed fennel seeds in a large mixing bowl. Add the curry powder and salt and pepper to taste. Add the vinegar and olive oil and mix well.
  • Garnish the chick peas with strips of red and yellow roasted peppers and the cilantro leaves. Serve the chili oil separately.

10 ounces skinless boneless chicken breast halves (about 2)

  • Prepare grill
  • In a saucepan boil carrot juice until reduced to about 3/4 cup, about 10 minutes, and cool. In a bowl, whisk together carrot juice, lemon juice, oil, and cumin and season dressing with salt and pepper. Dressing may be made 1 day ahead and chilled, covered.
