Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 9

1 cup sugar
1/4 cup flour
1/8 teaspoon salt
1/3 cup lemon juice
2 grated lemons, rind of (approx. 5 tbsp)
3 egg yolks
1 1/2 cups milk
2 tablespoons melted butter
3 egg whites

Steps:

  • Combine sugar, flour, salt, lemon juice and grated lemon rind.
  • Add egg yolks which have been well beaten, the milk and melted butter.
  • Last, fold in egg whites which have also been well beaten.
  • Put ingredients into a buttered 9" baking dish which has been set in a larger pan containing about 1" of hot water.
  • (both pans will go into the oven.) Bake for 45 minutes at 325 degrees F.
  • Remove baking dish at once from hot water and allow to cool before serving.

Tips:

  • Use fresh lemons. Fresh lemons provide the best flavor and aroma to the pudding.
  • Zest the lemons before juicing them. This will release the flavorful oils from the lemon peel, which will enhance the taste of the pudding.
  • Don't overcook the pudding. Overcooked pudding will be tough and rubbery. The pudding is done when it has reached a thick, custard-like consistency.
  • Chill the pudding before serving. This will help the pudding to set and firm up.
  • Serve the pudding with fresh fruit or whipped cream. This will add a delicious and refreshing touch to the pudding.

Conclusion:

Lemon pudding is a delicious and classic dessert that can be made with a variety of different ingredients. Whether you prefer a simple and traditional recipe or a more elaborate and decadent one, there is sure to be a lemon pudding recipe that you will love. With its bright and citrusy flavor, lemon pudding is a perfect dessert for any occasion.
