This potato soup with hamburger is a comforting, warm soup that is great for a chilly winter day, or anytime you want a yummy, easy soup! Serve with crusty bread.

4 large potatoes, peeled and cut into chunks, or more to taste
4 large carrots, chopped, or more to taste
1 medium onion, chopped
½ stalk celery with leaves, diced
3 cloves garlic, chopped
2 tablespoons dried parsley
1 tablespoon dried basil
1 tablespoon beef bouillon powder
salt and ground black pepper to taste
water as needed
1 pound lean ground beef

Steps:

  • Combine potatoes, carrots, onion, celery, garlic, parsley, basil, bouillon, salt, and pepper in a large soup pot. Fill pot with enough water to cover ingredients. Cover and boil until all ingredients begin to soften, 15 to 20 minutes. Remove from heat so you do not burn your hands.
  • Crumble in uncooked ground beef, a little at a time, stirring to mix a few times. Return to heat and bring back to a boil. Simmer on low to medium heat until all vegetables are cooked through and meat is no longer pink, 15 to 20 minutes.

I made a pot of Mom's Hamburger Soup this afternoon which is really smelling and tasting good. And I just emailed my daughter and asked her to bring home some crusty rolls from Panera's to have with it. This is a thick and hearty soup -- perfect for dunking the bread. It's cold outside, so this will be great for supper tonight. Since it's one of those recipes that isn't written down, I decided to post it while everything is fresh on my mind. Mom always used spaghetti, but I think it gets too mushy when the soup is warmed up for the 2nd or 3rd time. And she didn't use the steak seasoning, but to me it seems to lift the taste of the meat and tomatoes.

2 lbs hamburger
2 teaspoons salt
1/2 teaspoon pepper
2 tablespoons onion flakes
2 (16 ounce) cans diced Italian-style tomatoes, with juice
2 (46 ounce) cans tomato juice
2 teaspoons italian seasoning (optional)
2 (16 ounce) packages frozen mixed vegetables
1 cup white rice, uncooked (or raw spaghetti broken into 2-inch pieces)
2 cups hot water

Steps:

  • Use 8 quart stock pot.
  • Combine first 4 ingredients and cook together until hamburger is loose and no longer pink. Do not overcook. Drain off grease and return meat mixture to the stock pot.
  • Add the diced tomatoes, tomato juice and steak seasoning to the meat mixture; simmer on low heat for 30 minutes. Stir after 15 minutes.
  • Add the frozen mixed vegetables; simmer on low heat for 60 minutes, stirring every 15 minutes.
  • Add the rice and 2 C water; continue to simmer for about 60 minutes stirring frequently. Add additional water if soup is too thick.

My mom has been making this soup ever since I can remember. Nothing is blended. This is my all time favorite soup. I hope you enjoy as much as I do! I also use about a table spoon of better than bouillon chicken base and you can also use fat free half and half and it doesnt take any flavor out and you can use as much or as little potatoes and leeks as you want

2 leeks (white parts sliced and used only)
4 -6 potatoes, diced
1 (49 1/2 ounce) can chicken broth
half-and-half
1 teaspoon flour
salt and pepper
butter

Steps:

  • in a large pot combine leeks and potatoes and flour and cook in butter until leeks are transparent.
  • add chicken broth and cook until potatoes are fork tender, probably about 30 minutes depending on how big or little you cut your potatoes, stir occasionally to prevent sticking
  • add half and half until the soup turns creamy color
  • salt and pepper to taste.
