MOM'S LEMON BARS

These are the best lemon bars I've ever had. The key to these is the butter/shortening combo in the crust, you must use both, do not substitute one for the other.

Tips:

  • Use fresh lemons for a brighter flavor. If you don't have fresh lemons on hand, you can use bottled lemon juice, but the flavor won't be as pronounced.
  • Don't overmix the batter. Overmixing will make the crust tough.
  • Chill the dough before baking. This will help the crust to set and prevent it from spreading too much in the oven.
  • Bake the bars until the crust is golden brown and the filling is set. This will typically take about 25-30 minutes.
  • Let the bars cool completely before cutting them. This will help to prevent them from falling apart.
  • For a richer flavor, use a combination of butter and cream cheese in the crust.
  • Add a layer of raspberry jam between the crust and the lemon filling for a delicious twist.
  • Top the bars with a meringue topping for a classic lemon meringue bar.

Conclusion:

Lemon bars are a classic dessert that is perfect for any occasion. They are easy to make and can be customized to your liking. With a few simple tips, you can make the best lemon bars that will be the hit of any party or gathering. So next time you're looking for a delicious and refreshing dessert, give these lemon bars a try. You won't be disappointed!
