1 tbsp olive or avocado oil
1 lb lean ground turkey or beef (I use 93% lean ground turkey.)
28 oz canned crushed tomatoes (I prefer fire-roasted.)
1/4 cup water
3 tbsp tomato paste
1 tbsp garlic (minced)
1 1/2 tsp dried oregano
1 1/2 tsp dried basil
1 tsp dried parsley
1 tsp salt
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp pepper

Steps:

  • Add oil to a skillet on the stove top. Heat to medium-high heat. Once pan is hot, add the ground meat. Saute the meat, stirring occasionally, until browned. If your turkey or beef isn't very lean you may want to drain the grease. (I find that isn't necessary when using 93% lean.)
  • Reduce heat to medium low. Add canned crushed tomatoes, water, tomato paste, garlic, oregano, basil, parsley, salt, onion powder, garlic powder, and pepper to skillet with the meat. Stir to combine. Cover and gently simmer for 10 to 15 minutes or until everything is heated through and flavors have married.
  • Serve over your favorite pasta, spaghetti squash (see my recipe for Roasted Spaghetti Squash), or zoodles. You can even add it to the top of roasted veggies for a satisfying but light meal!

4 Tbsp extra virgin olive oil (good quality)
3 cloves of fresh garlic (be sure it is not from China)
fresh Italian parsley, chopped
8 oz ground beef, grass fed
about 2 tsp Kosher or sea salt
1 (28 oz) jar/can of good quality Italian tomatoes (passata/purée or for the best quality, look for Pomodoro San Marzano Dell'Agro Sarnese-Nocerino DOP tomatoes--which are only ever whole, peeled tomatoes grown in a certain region of Italy)
8 to 10 fresh Italian basil leaves
(optional black pepper, to taste)

Steps:

  • Crush the garlic with the flat side of a knife.
  • Bring the extra virgin olive oil (and lard, if using) to medium high heat, then add the garlic and chopped parsley.
  • After a minute, add the ground beef and break up with a wooden spoon. Add some salt, and cook until it begins to dry up, then add the tomato passata/purèe/chopped tomatoes of your choice.
  • If using Mutti, they tend to be thick, so add about ¾ cup (6 oz) of water or until the bottom line of the jar (shake to rinse) then add to the pot. If you're using another brand, rinse the can/jar with a little less water, unless it's very thick.
  • Put the burner on high to bring the sauce to a simmer, and add more salt. Don't be afraid to add Kosher/sea salt as I can guarantee you will have much less sodium in this sauce than a jar of store-bought.
  • Lower the heat so that the sauce simmers gently for about an hour, stirring occassionally (so that the sauce won't stick). Taste for seasoning after about 30 minutes, and add salt if needed.
  • When the sauce is ready, check once again for seasoning. Add salt and pepper as desired, and a generous amount of fresh basil, torn into pieces.

1 cup chicken broth

1 (14 ounce) can diced tomatoes, petite
1 (6 ounce) can tomato paste
1 teaspoon dried basil

Even my husband loved it, so thought I should share it :) From beginning to end it literally only took 10 minutes to toss together and simmered it about 15-20 minutes to let the spices and flavors meld. 1 (8 ounce) can tomato soup (condensed, do not add water)
0.5 (8 ounce) can stewed tomatoes, with onions
1 tablespoon mixed Italian herbs
1 teaspoon salt (or to taste)
1 teaspoon black pepper

1 1/2 lbs ground beef or 1 1/2 lbs chicken tenderloins
1 tablespoon shredded gouda cheese (optional)

  • Brown your ground beef or, skinless chicken tenderloins until done all the way through.
  • If using chicken tenderloins, strip off fat after done cooking and dice the chicken into bite sized cubes.
  • While meat is browning on medium temperature cut and dice your garlic and fry together with your meat (or if using jarred type just toss in with your meat and brown together).
  • While those two are cooking begin crushing your herbs. If you don't have a mortar and pestle, put the herbs in a thick plastic sandwich bag or similar and use a rolling pin, meat mallet or, similar and gently (don't go absolutely wild - unless you've had a really bad day :)) and beat the herbs until almost a fine grind of sorts, should not look like dust! Then add this to your meat mixture.
  • Last but not least add in all the other ingredients and stir together, mixing well.
  • Let simmer on med-high for about 5 minutes stirring occasionally and then turn down to med. low for remainder of time and cover. After you have done this then cook your favorite pasta and when that is done, just top with your sauce and you're done.
  • Don't forget to make garlic bread!
  • If it is not thick enough just add more parmesan to the mixture.
  • Also feel free to add other veggies like zucchini, eggplant, mushrooms, etc. Make it your own!
