MYSTERY SALAD

MYSTERY SALAD image

I first had this salad summer in 1966. I was 10, with my parents visiting a family friend. Like a lot of kids I thought...ok this is boring, and this ole lady is boring too! LoL She served this with dinner that day, I fell in love with it, asking if she would let me have the recipe. Boredom took a hike where food or recipes...

Time 20m

Number Of Ingredients 9

1 box 3 oz lime jello
1 c crushed pineapple in juice
1 c evaporated milk
1/2 c flaked coconut
1/2 c celery, sliced thinly
1 c carrot, shredded, about 2 medium
1 c cheddar cheese, shqrp shredded
1 c chopped pecans
1/2 c mayonnaise

Steps:

  • 1. In a small to medium saucepan, bring pineapple to a boil, add jello and stir till disolved. Cool mixture about 10 minutes and stir in evaporated milk. Place in fridge and chill for 30 minutes or mixture begins to thicken...like egg whites.
  • 2. While jello mixture is chilling, stir together in a large bowl the flaked coconut, celery, shredded cheese, carrot and pecans. Add jello when thickened fold to incorporate then fold in mayonnaise. Turn into a ring mold, a decorative serving bowl or just leave in the mixing bowl. Smooth the top and chill at least 5 hours or overnight till firm.
  • 3. Unmold to serving plate if using the mold. This is great alone, or as a side with dinner. I have added whipped cream to the top as a dessert.

Tips:

  • Select Fresh Ingredients: The freshness of ingredients is paramount for a flavorsome salad. Choose crisp lettuce, vibrant tomatoes, and crunchy cucumbers.
  • Variety is Key: Combine different textures and flavors for an interesting salad. Add leafy greens, crunchy vegetables, sweet fruits, and tangy dressings.
  • Dress Smartly: The dressing is the heart of the salad. Use high-quality olive oil, vinegar, herbs, and spices to create a well-balanced and flavorful dressing.
  • Don't Overdress: A little dressing goes a long way. Toss the salad gently to evenly coat the ingredients without drowning them.
  • Serve Immediately: Salads are best enjoyed fresh. Avoid making them hours in advance, as the ingredients may wilt and lose their vibrancy.
  • Experiment with Different Greens: Don't limit yourself to just lettuce. Try arugula, spinach, kale, or watercress for a change in texture and flavor.
  • Add Protein: Incorporate grilled chicken, tofu, or beans for a more substantial salad that can be a complete meal.
  • Play with Fruits: Add fruits like berries, apples, or oranges for a sweet and tangy twist. Fruits also provide essential vitamins and minerals.
  • Use Nuts and Seeds: Sprinkle some nuts or seeds, such as walnuts, almonds, or sunflower seeds, for added crunch and healthy fats.
  • Garnish Elegantly: Finish your salad with a sprinkle of fresh herbs, grated Parmesan cheese, or crumbled bacon for an extra layer of flavor and visual appeal.

Conclusion:

Crafting a delicious salad is an art that combines fresh ingredients, diverse textures, and a well-balanced dressing. By following these tips, you can create a variety of salads that are both visually appealing and packed with flavor. Experiment with different ingredients, dressings, and garnishes to discover your own signature salad recipes that will impress your friends and family. Remember, the key to a great salad lies in the quality of ingredients, the balance of flavors, and the attention to detail.
