3 tablespoons vegetable oil
3 tablespoons all-purpose flour
One 28-ounce can enchilada sauce
One 10-ounce can enchilada sauce
3 cups chicken broth
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
3 pounds ground beef
2 cloves garlic, minced
1 medium onion, finely chopped
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt
Nonstick cooking spray, for the baking dishes
One 15-ounce bag nacho cheese-flavored chips, such as Doritos
2 cups shredded pepper jack cheese
2 cups shredded Cheddar cheese
1 1/2 cups shredded romaine
3 Roma tomatoes, diced
1/2 cup sour cream
1/4 cup sliced black olives
3 green onions, sliced

Steps:

  • For the sauce: In a saucepan over medium heat, combine the vegetable oil and flour. Cook, whisking, until it begins to bubble; let it bubble for 1 minute. Pour in the enchilada sauce, chicken broth, cumin and some salt and pepper. Raise the heat and bring to a boil. Reduce to a simmer while you prepare the meat.
  • For the meat: Brown the ground beef with the garlic and onions in a large skillet over medium-high heat, 5 to 8 minutes. Drain the fat and stir in the cumin and salt to combine. Stir the meat into the simmering sauce and shut off the heat.
  • For the casserole: Preheat the oven to 350 degrees F. Lightly grease one 9-by-13-inch aluminum foil baking dish and one 9-by-13-inch glass baking dish with cooking spray.
  • Break up the chips by crushing the bag slightly with your hands. Make sure not to over crush the chips; you're looking for pieces, not crumbs. Mix together the cheeses in a medium bowl.
  • Divide a third of the broken chips between the prepared baking dishes. Top each with a quarter of the beef mixture and 2/3 cup of the cheese. Repeat, adding another layer of chips, beef mix and cheese to each. Finish by dividing the remaining chips between the baking dishes. Top each with 2/3 cup cheese.
  • Cover the glass baking dish with foil and bake for 25 minutes. Remove the foil and continue to bake until bubbly, another 15 to 20 minutes.
  • For the toppings: Top the cooked casserole with the shredded romaine, diced Roma tomatoes, sour cream and sliced black olives and green onions before serving.
  • Allow the aluminum foil baking dish to cool completely while the other is baking. Once cool, wrap tightly in plastic wrap and foil. Transfer to the freezer.
  • To bake from frozen, preheat the oven to 350 degrees F.
  • Unwrap the baking dish and re-cover with foil. Bake, covered, for 35 to 40 minutes. Uncover and bake until bubbly, 15 to 20 minutes. Top with another batch of the toppings.

  • Cook ground beef on top of stove or microwave; drain off fat.

  • 1. Preheat oven to 400 degrees. Place the tator tots in a 9x13 light greased pan and place in the oven.
  • 2. In a large skillet mix together the ground beef spices, taco seasoning, salsa, green pepper and onion. Cook until the beef is throughly browned.

1 cup - shredded cheddar cheese (I use spicy cheddar)
1/2 cup - chopped fresh spinach or cilantro
1/2 cup of fresh tomato, diced
1/2 cup salsa (I like Primavera chipotle salsa)
1 can beans, rinsed and drained (black beans or pinto)
10 corn tortillas, cut into large-bite-size pieces (or substitute with corn tortilla chips or whatever you have on hand--tonight I used 4 corn tortillas and a package of prepared polenta)

Steps:

  • -Pour 1 tsp canola or olive oil into a 9x9 baking pan. Spread it around to grease the bottom and sides. -Cover bottom of pan with one layer of tortilla pieces. -Sprinkle salsa on the tortilla pieces In the pan. -Sprinkle a layer of 1/2 of the beans. Layer 1/2 of the meat, then 1/2 of the spinach, 1/2 the tomatoes, 1/3 of the salsa, 1/3 of the cheese, 1/3 of the tortilla pieces. -Layer the rest of the beans, meat, spinach and tomatoes. -Layer 1/2 of the remaining salsa, tortilla pieces, and cheese. -Top with the remaining tortilla pieces, salsa, and cheese. -Bake at 375 degrees for 25-30 minutes. Notes: It's a great way to use leftovers from "taco night" or steak that you brought home from a restaurant. Make it work for you--try shortcuts. For instance, you could substitute chili for all the ingredients except tortillas and cheese. Go ahead and add/remove/substitute ingredients with things you prefer. If you like it spicy, dice 1-3 jalapenos and toss them in. We usually put two jalapenos in our taco meat. This recipe is very flexible. I usually use ground beef (seasoned with chili powder, garlic powder, oregano, cumin, paprika, salt and pepper), chopped fresh spinach (Erik doesn't like cilantro), pinto beans, and the other ingredients I listed. 1 pkg taco seasoning mix
3 c finely shredded cheddar jack cheese

  • 1. Brown ground beef and onion in large skillet. Cook until beef is no longer pink. Drain

2 cups cubed cooked chicken
1 1/2 cups crushed nacho tortilla chips
1 (10 1/2 ounce) can condensed cream of chicken soup, undiluted
1 cup sliced fresh mushrooms
1/2 cup sour cream
4 tablespoons 2% low-fat milk
2 tablespoons chopped green chilies
1 teaspoon finely chopped jalapeno pepper (optional)
1/2 cup shredded part-skim mozzarella cheese
1/2 cup shredded cheddar cheese

Steps:

  • In a bowl, combine the first eight ingredients.
  • Combine the cheeses and stir half into the chicken mixture.
  • Transfer to a 1-qt. baking dish coated with cooking spray.
  • Sprinkle with remaining cheeses.
  • Bake, uncovered, at 350° for 25-30 minutes or until cheese is bubbly.

BEEF AND POTATO NACHO CASSEROLE

Steps:

  • 1. 2lbs. Ground Beef~ onion
  • 2. 1 Pkg. Taco Seasoning( low sodium)
  • 3. 1 8 oz. can of tomato sauce
  • 4. 1/4 cup water
  • 5. 1 can green chiles
  • 6. 1 can chili beans(undrained)
  • 7. 1 Pkg. O'Brien Frozen Potatoes
  • 8. 1 Can Nacho Cheese Soup
  • 9. 1/2 Cup Milk
  • 10. 1 T. Sugar
  • 11. Add the first five ingredients while browning the gr. beef, In Large bowl combine soup, milk and sugar. Put into a greased 9x13 Pan cover and Bake @ 375 degrees for 1@1/2 hours! Will be little runny at first but does thicken up! Delicious!

¾ C. quick cooking Minute rice, uncooked
½ to 1 lb. hamburger
1 can corn (can use frozen)
1 can Mexican stewed tomatoes
½ pkg. mild taco seasoning
8 oz. sour cream
½ C. water
8 oz. shredded Cheddar cheese
1 C. broken tortilla chips

Steps:

  • Lightly grease a 2 quart baking dish. Put uncooked rice on bottom. Brown hamburger and drain. (If using chicken, cook and dice the chicken). Stir in corn (drained), Mexican tomatoes (undrained), and water. Mix together seasoning (if you want it spicier add more of seasoning package) and sour cream, then add to other ingredients. Pour into casserole dish. Cover and bake at 350 degrees for 30 minutes. Top with cheese and chips and bake for 5 minutes uncovered until cheese is melted. You can substitute Salsa for the Mexican tomatoes and taco seasoning. I always put the cheese on top and then the chips so the chips don't get soggy.

2 Tbsp olive oil
1/2 lb bell peppers, sliced, use both red and green if possible
1 1/2 lb lean ground beef
1/2 tsp garlic salt
2 tubes refrigerated pizza dough
1 jar(s) (16 ounces) salsa, use your favorite
3 c shredded taco cheese blend
1 can (2.2 ounces) sliced black olives, drained (about 1/4 cup)
3 large scallions, trimmed and sliced (or substitute 1 large onion)

Steps:

  • 1. Heat oven to 375 degrees. Coat 13 x 9 x 2-inch baking dish with nonstick cooking spray. In large skillet, heat oil over medium-high heat. Add peppers, ground beef and garlic salt; cook, stirring to break up clumps of beef, until the peppers are soft and beef is no longer pink, about 5 minutes. Drain off any excess fat from skillet.
  • 2. Remove pizza dough from tubes. Cut the dough crosswise into 1/2-inch-wide slices, then cut each slice into quarters. In large bowl, toss together dough pieces and salsa. Add cooked meat mixture, 2 cups of the taco-cheese blend and olives. Scrape mixture into baking dish. Sprinkle the remaining 1 cup taco-cheese blend over the top.
  • 3. Bake at 375 degrees for 30 minutes. Sprinkle scallions (or onions) evenly over the top. Bake an additional 5 minutes.
