1/2 cup shortening
2 cups sugar
2 eggs
2 teaspoons vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg or 1 teaspoon mace
1 teaspoon ginger
6 cups peeled diced tart apples

Steps:

  • Cream shortening and sugar. Add eggs and vanilla. Combine dry ingredients and add to mixture. Stir in apples. Spoon into greased 11 x 13 pan. Bake at 350 for 45-50 minutes or until the toothpick comes out clean.

7 large Cortland apples - peeled, cored, and sliced
1 cup white sugar
1 tablespoon ground cinnamon, or more to taste
1 cup all-purpose flour
¼ cup brown sugar
⅓ cup unsalted butter, cubed

This is a slight variation of a recipe of my Grandmother's. It is very simple to make. If you can't find vanilla bean paste you can use vanilla extract. This German Apple Cake is great as a dessert or even as breakfast.

3/4 cup butter
1 cup sugar
1 teaspoon vanilla bean paste
2 cups flour, I use 9oz by weight for this recipe
1 teaspoon baking powder
1/8 teaspoon fresh ground nutmeg
1 pinch salt
1 large egg
1 egg yolk
2 cups apples, large dice
cinnamon
turbinado sugar, Sugar in the Raw

Steps:

  • Cream the butter, sugar and vanilla extract.
  • In a seperate bowl mix together the flour, salt, baking powder and nutmeg.
  • Slowly add the dry ingredients into the mixer with the creamed butter and mix.
  • Add the eggs and mix until everything is fully incorporated.
  • Roll dough into a ball and chill in the fridge for 1 hour.
  • Peaheat oven to 350°F.
  • Put half of dough into a greased and flowered 9 in round baking pan or pie pan and press down to pack.
  • Cover with chopped apples.
  • Cover with the rest of dough and sprinkle with cinnamon and turbinado sugar.
  • Bake for about 50-60 minutes at 350°F or until the top becomes golden brown.
