Dough for single-crust pie
3 tablespoons butter
4 cups thinly sliced zucchini (about 3 medium)
1 large onion, thinly sliced
2 large eggs, room temperature
2 teaspoons dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
2 cups shredded part-skim mozzarella cheese
2 teaspoons prepared mustard

Steps:

  • Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a large skillet, heat butter over medium heat. Add zucchini and onion; cook and stir until tender. Drain and cool slightly., Whisk eggs and seasonings until blended. Stir in cheese and zucchini mixture. Spread mustard over pastry shell; add filling., Bake on a lower oven rack until a knife inserted in center comes out clean and crust is golden brown, 35-40 minutes. If needed, cover edge loosely with foil during last 15 minutes to prevent overbrowning. Let stand 10 minutes before cutting.

1 unbaked 9-inch pie crust
2 tablespoons butter
1 ½ pounds zucchini, thinly sliced
1 cup shredded carrots
1 cup chopped mushrooms
1 ¾ cups shredded mozzarella cheese
1 ¼ cups ricotta cheese
⅔ cup half-and-half
4 eggs, beaten
¾ teaspoon salt
½ teaspoon dried oregano
½ teaspoon dried basil
¼ teaspoon garlic powder
freshly ground black pepper to taste
¼ teaspoon paprika

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Fit pie crust into a pie dish and prick the bottom of the crust with a fork. Bake in the preheated oven for 7 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until crust is golden, 8 to 10 more minutes.
  • Melt butter in a large skillet over medium heat; cook and stir zucchini, carrots, and mushrooms until vegetables are tender, about 10 minutes; drain. Place half the zucchini mixture in the crust. Sprinkle with mozzarella cheese.

1/2 cup onion, grated
1/2 cup vegetable oil
1/4 teaspoon dried oregano
1/2 cup parmesan cheese, grated
1/2 teaspoon salt (to taste)
1 tablespoon garlic powder
4 large eggs, beaten
1 cup Bisquick baking mix
3 cups zucchini, skin on, cut wafer thin

Steps:

  • Beat eggs, then add onion, oil, oregano, cheese, salt, garlic powder.
  • Using a wooden spoon, fold in the Bisquick and the zucchini slices.

3 large eggs, beaten lightly
2 cups granulated sugar
1 cup vegetable oil
1 teaspoon vanilla extract
2 cups zucchini, grated
3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon baking powder
3 teaspoons ground cinnamon
1 cup nuts, chopped
1 cup raisins

Steps:

  • Beat eggs, sugar, oil and vanilla together until thick.
