This is my adaptation of a recipe I found in "The Unwatched Pot". Total comfort food. Everyone in the family likes this one. It freezes very well and is creamier when it thaws.

2 cups dried navy beans
1/2 cup onion, chopped
3 stalks celery, diced
1 ham hock
1 teaspoon dried sage
1 bay leaf
1 garlic clove, minced
1/2 teaspoon black pepper
1 (16 ounce) can chicken broth

Steps:

  • Place all of the ingredients in the crock pot.
  • Add enough water to generously cover the beans.
  • Cook on low for 8-10 hours or on high for 5-6.
  • Remove ham hock.
  • Discard fat and bones and return the meat to the soup.

1 (16 ounce) package dried navy beans
6 cups water
1 (14.5 ounce) can diced tomatoes
1 onion, chopped
2 stalks celery, chopped
1 clove garlic, minced
½ pound chopped ham
1 cube chicken bouillon
2 tablespoons Worcestershire sauce
1 tablespoon dried parsley
2 teaspoons garlic powder
1 bay leaf
1 teaspoon salt
½ teaspoon ground black pepper
3 cups water

Steps:

  • Combine beans, water, tomatoes, onion, celery, garlic, ham, bouillon, Worcestershire sauce, parsley, garlic, and bay leaf in a stock pot; bring to a boil. Lower heat, cover, and simmer for two hours.
  • Add additional water. Season with salt and pepper. Simmer for an additional two hours. Discard bay leaf.

2 cups dried navy beans, picked over, soaked in water to cover overnight and drained
2 -3 slices bacon, cooked until the fat is rendered but not crispy
1 small yellow onion, finely chopped
1 celery rib, minced
1 small carrot, minced
1 bouquet garni (1/2 tsp. dried oregano, 3 sprigs parsley, 1/2 fresh sage leaf and 1 bay leaf wrapped in cheesecloth)
6 cups chicken broth or 6 cups water
salt and pepper
1/2 cup heavy cream (optional)

Steps:

  • Combine the beans, bacon, onion, celery, carrot, bouquet garni and broth in slow cooker.
  • Cover and cook on LOW for 8 to 9 hours.
  • Remove the bouquet garni.
  • Discard.
  • Puree about one-third of the soup in a food processor.
  • Season with salt and pepper.
  • Add cream if using, cover and continue to cook on LOW 15 minutes longer.

8 cups water
1/2 cup chili sauce
1/2 teaspoon dried marjoram leaves
2 medium carrots, chopped (1 cup)
1 large onion, chopped (1 cup)
1 medium stalk celery, chopped (1/2 cup)
1 can (14 oz) vegetable broth
2 tablespoons chopped fresh parsley

Steps:

  • In 8-quart Dutch oven, heat beans and water to boiling. Boil uncovered 2 minutes. Remove from heat; cover and let stand 1 hour.
  • Stir in remaining ingredients except parsley. Heat to boiling. Reduce heat to low; cover and simmer about 1 hour, stirring occasionally, until beans are tender.

1 (16 ounce) package dried navy beans
water to cover
7 cups chicken stock
½ cup margarine
4 carrots, chopped
1 onion, chopped
½ pound bacon

Steps:

  • Clean and sort the beans. Place them in a large bowl with water to cover and soak for 3 hours.
  • In a large pot over medium heat, combine the beans and the chicken stock and allow to simmer.
  • Meanwhile, melt the butter or margarine in a large skillet over medium heat. Add the carrots and onion and saute for 10 minutes, or until onion is caramelized. Add this mixture to the pot.
