1 cup toasted almonds or walnuts
2 cloves garlic
1 cup panko breadcrumbs or matzo meal
1 cup shredded Parmesan, plus more for serving
2 tablespoons dried parsley

3 1/2 cups (28 ounces) tomato sauce of your choice
Flavorless oil, like canola or vegetable, for frying
12 ounces fresh mozzarella, sliced 1/4 inch thick
1 bunch fresh basil leaves
6 slider rolls, toasted
Chopped fresh parsley or basil, for serving

Steps:

  • In a food processor, combine the nuts and garlic and pulse to a coarse crumb. Add the breadcrumbs, Parmesan, parsley, salt and a few turns of pepper and pulse to combine. 2 tablespoons olive oil, divided
1 yellow onion, diced
5 cloves garlic, minced, divided
1 pound ground beef
2 tablespoons chopped Italian parsley, plus more for garnish
1 large egg
¼ cup plain bread crumbs
1 cup shredded fontina cheese, divided
2 teaspoons kosher salt
freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
3 tablespoons unsalted butter
18 dinner rolls
2 cups spicy tomato sauce
2 tablespoons freshly grated Parmigiano-Reggiano cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
