Steps:
- 1. Beat egg and yolks until light and fluffy. Add water and salt mix. Stir in flour then turn out onto a lightly floured counter and knead until smooth. This could take up to 5 minutes, don't give up it will be worth it. Cover the dough with a damp towel and let rest for 10 minutes
- 2. Roll out the dough to about 1/8th inch thick or however you like them. Cut your noodles to desired size. If you don't have a pasta machine just use your pizza cutter. At this point you can cook the noodles, or let them dry over night and then put them in plastic bags and freeze for up to one month.
- 3. In a large pot bring your water to a boil, add some salt to the water. Boil the noodles for 3 to 5 minutes. Then serve with butter or your favorite sauce. If you want chicken and noodles boil in the chicken broth.
Tips:
- Use high-quality ingredients: Fresh eggs, good-quality flour, and pure water make a big difference in the taste and texture of the noodles.
- Knead the dough thoroughly: Kneading the dough develops the gluten, which gives the noodles their chewy texture. Knead for at least 10 minutes, or until the dough is smooth and elastic.
- Rest the dough: After kneading, let the dough rest for at least 30 minutes. This allows the gluten to relax and makes the dough easier to roll out.
- Roll the dough thinly: The thinner you roll the dough, the more delicate the noodles will be. Aim for a thickness of about 1/16 inch (1.5 mm).
- Cut the noodles evenly: Use a sharp knife to cut the noodles evenly. This will help them cook evenly.
- Cook the noodles in plenty of boiling water: This will prevent them from sticking together.
- Don't overcook the noodles: Egg noodles are best when they are cooked al-dente, with a slight bite to them. Cook them for 2-3 minutes, or until they are just tender.
Conclusion:
Making egg noodles is a simple process, but it does require a bit of time and effort. By following these tips, you can make delicious egg noodles that are perfect for any dish. So next time you're looking for a homemade noodle recipe, give this one a try!
