12 ounces sea scallops
1 large shallot
12 ounces bacon
12 ounces nacho chips
12 ounces mild cheddar cheese (shredded)

Steps:

  • Preheat oven to 375.
  • Line a large oven sheet or cookie sheet with two sheets of parchment paper, enough to overlap sides of pan. Set aside.
  • Drain scallops in colander and pat dry with paper towel.
  • Cut scallops into quarter pieces, cover and refrigerate.
  • Chop shallot, cover and refrigerate.
  • In a large frying pan fry bacon until lightly crisp. Set bacon on paper towel to drain grease. Remove fry pan from heat, drain grease from pan reserving 1 tablespoon of the grease in frying pan. Cut bacon into 1 inch pieces and set aside.
  • Spread a bed (12oz) of the nacho chips onto the parchment paper prepared baking sheet. The chips should overlap.
  • Reheat the frying pan with the 1 tablespoon of reserved bacon grease, cook the shallot in the grease pan on medium high for 2-3 minutes, stirring occasionally.
  • Place nacho chips into preheated oven for 3-4 minutes.
  • Add scallops to shallot and bacon grease pan continue to cook mixture for 3-4 minutes longer until scallops are white in color. Remove scallops and shallot mixture from heat and drain in colander.
  • Remove chips from oven. Evenly distribute shallot and scallop mixture over chips, evenly distribute chopped bacon over chips, top shredded cheese evenly over bacon and scallops.
  • Return nachos to oven at 375 degrees until cheese melts, watch carefully not to over cook.

2 pounds ripe Roma tomatoes or 2 (15-ounce) cans fire-roasted tomatoes
8 ounces thick-cut bacon, thinly sliced
8 ounces fresh Mexican chorizo, casing removed, coarsely chopped
1 1/2 pounds beef sirloin, excess fat removed, meat cut into 1/2-inch pieces
Kosher or sea salt and black pepper
1 medium white onion, halved and slivered (about 1 1/2 cups)
1 to 2 jalapeños or serrano chiles, halved, deseeded if desired, and sliced
2 garlic cloves, finely chopped
1 to 1 1/2 pounds store-bought or Homemade Tortilla Chips (see recipe)
12 ounces shredded Mexican melty cheese, like Oaxaca, Asadero or quesadilla, or even Monterey Jack or mozzarella (about 3 cups)
1 ripe avocado, halved, pitted and finely chopped
1 cup crumbled queso fresco
8 scallions, trimmed and thinly sliced

Steps:

  • If using fresh tomatoes, place them on a small baking sheet covered with aluminum foil. Place them under the broiler for 8 to 10 minutes, turning halfway through, until charred, mushy and juices have begun to run. Remove from heat. Once cool enough to handle, chop them without discarding any of the juices, seeds or charred skin.
  • Heat a large (12-inch) skillet over medium-high. Add the bacon and cook, stirring occasionally, until it browns slightly and renders some of its fat, 3 to 4 minutes.
  • Add the chorizo to the bacon, and cook, breaking the sausage into smaller pieces using a wooden spoon as it begins to brown and crisp, 3 to 4 minutes.
  • Add the beef, season with salt and pepper and cook, stirring a couple times, until it begins to brown, about 4 minutes. Incorporate the onion and jalapeño and cook until they begin to wilt, 2 to 3 minutes. Add the garlic and stir until fragrant but not browned, less than 1 minute.
  • Stir in the fresh or canned chopped tomatoes with their juices and cook over high, stirring occasionally, until saucy, 2 to 3 minutes. Season to taste with salt.
  • Set the rack in the middle of the oven and heat to 400 degrees. Place all the tortilla chips in a half sheet pan or large baking sheet in an even layer. Cover the chips with the bricklayer meat mixture and all of its chunky salsa. Cover with the shredded cheese. Bake until cheese has completely melted, 8 to 10 minutes.

2 cups colby-monterey jack cheese
1/2 tablespoon southwest seasoning, spice
12 ounces corn tortilla chips
iceberg lettuce, shredded
15 grape tomatoes, cut in half, lengthwise
2 tablespoons butter
2 tablespoons flour
2 cups half-and-half cream
1 cup colby-monterey jack cheese
1 (10 ounce) can Rotel Tomatoes, drained (mild or hot)
1/2 teaspoon salt
1/4 teaspoon pepper (ground ancho or chipotle pepper tastes great)
1/2 avocado, mashed
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup buttermilk
1 tablespoon dried dill
1 bunch chives, chopped, to taste (can sub thinly sliced green onions)
1 teaspoon salt
1 teaspoon onion powder
1/2 teaspoon garlic
1/4 teaspoon pepper (try chipotle powder or ancho powder)

Steps:

  • Preheat oven to 350 °F.
  • Season steak and sweet peppers with salt and pepper. Place peppers on a lined baking sheet and put seasoned steak on top. Bake for 25-30.
