ASIAN SHRIMP PANCAKES

Asian Shrimp Pancakes image

I keep these crisp, colorful appetizer pancakes on the small side so my guests can easily pick them up with chopsticks and eat them in a few bites. I think the little shrimp-topped cakes are as good as any I've tasted in Asian restaurants. -Tonya Burkhard, Davis, Illinois

Time 25m

Yield 4 serving(s)

Number Of Ingredients 6

1 cup rice
2 coconuts (milk from nuts)
1 lb shrimp
salt and pepper
1/2 cup diced tomatoes
1/2 cup shredded carrot

Steps:

  • Cook rice with coconut milk instead of water.
  • Add the shrimp, salt, and pepper.
  • At the last minute add the tomatoes and carrots.

Tips:

  • Choose the right shrimp. Medium-sized shrimp are ideal for this recipe, as they will cook quickly and evenly. If using larger shrimp, cut them into smaller pieces before cooking.
  • Don't overcook the shrimp. Shrimp cooks very quickly, so it's important to watch them carefully and remove them from the heat as soon as they turn pink and opaque.
  • Use a well-seasoned pan. A well-seasoned pan will help to prevent the pancakes from sticking and will also add flavor to the dish.
  • Be patient when flipping the pancakes. Nigerian pancakes are delicate, so it's important to be patient when flipping them. Use a spatula to gently lift the edges of the pancake and then flip it over in one quick motion.
  • Serve the pancakes immediately. Nigerian pancakes are best served hot off the griddle. Serve them with your favorite toppings, such as butter, syrup, or honey.

Conclusion:

Nigerian pancakes with shrimp is a delicious and easy-to-make dish that is perfect for breakfast, lunch, or dinner. The pancakes are light and fluffy, and the shrimp adds a savory flavor that makes them irresistible. This recipe is sure to be a hit with your family and friends.
