NIKKI'S SUGAR COOKIES
No chilling time required with this easy recipe. I have been making this for many years. I usually have to double the recipe. You can reroll many times. Decorate with sugar or frosting whichever you prefer.

- In large bowl, beat 1 cup shortening, 1 1/2 cups granulated sugar, egg, and vanilla with electric mixer on medium speed until creamy, scraping sides of bowl if necessary.
