This is a wonderful alternitive to real mayonnaise. I have been put on a strict diet and this saves the day! Makes a great salad dressing(I add a little honey), spread for sandwiches, or dip. Adapted from Raw and Living Foods. This is popular in Spain, Mexico, Central America and the Southern USA.

Tips:

  • Make sure to choose ripe avocados. Unripe avocados will be hard and difficult to blend. They also will not have the same creamy texture.
  • Use fresh lemon or lime juice. Bottled lemon or lime juice will not taste as good and can make your mayonnaise bitter.
  • Add a little bit of salt and pepper to taste. This will help to balance out the flavors of the mayonnaise.
  • If you are using a blender, be careful not to over-blend the mayonnaise. Over-blending can make the mayonnaise too thick and rubbery.
  • If you are using a food processor, pulse the ingredients until they are combined. Do not over-process the mayonnaise, or it will become too thick.
  • Store the mayonnaise in a covered container in the refrigerator for up to 1 week.

Conclusion:

Avocado mayonnaise is a delicious and healthy alternative to traditional mayonnaise. It has fewer saturated fats and cholesterol than traditional mayonnaise and is also a good source of vitamins and minerals. Avocado mayonnaise is perfect for sandwiches, salads, and dips. It also can be used as a spread for bread or crackers. With its creamy texture and mild flavor, avocado mayonnaise is a versatile condiment that can be enjoyed by people of all ages.
