PEANUT BUTTER NO BAKE COOKIES

Peanut Butter No Bake Cookies image

Posted in response to a request, I got this recipe from a lady at church who make them for Bible School in the 1980s. I had made chocolate no-bake cookies for YEARS but had never heard of peanut butter no bake cookies. So delicious that my choco-holic daughter likes them better than the chocolate variety! No. of servings depends on how big you make the cookies. Prep time depends on how fast you are scooping the cookies onto the wax paper covered newspaper! (You get better w/ practice! :D )

Provided by Leah Maroney

Categories     Snack     Dessert

Time 43m

Number Of Ingredients 8

1/2 cup unsalted butter (cut into cubes)
1 1/4 cup granulated sugar
1/2 cup brown sugar
1/2 cup milk
3/4 cup peanut butter (creamy)
1 teaspoon vanilla extract
1/4 teaspoon salt
3 1/2 cups quick-cooking oats

Steps:

  • Gather the ingredients.
  • Line 2 large baking sheets with parchment paper.
  • Combine the cubed butter, granulated sugar, brown sugar, and milk in a small saucepan and heat on medium-high heat. Stir with a wooden spoon until the butter has melted.
  • Stop stirring and let the mixture come to a rolling boil. This means active bubbles around the edges and in the center of the pot. Once it comes to a complete rolling boil, set a timer for 60 seconds.
  • Stir with the wooden spoon once or twice to prevent burning. Once the timer goes off, immediately remove the saucepan from the heat.
  • The mixture will be very hot, so carefully stir in the peanut butter, vanilla extract, and salt until the peanut butter has melted and is incorporated into the butter mixture.
  • Fold in the oats until they are completely coated with the peanut butter mixture.
  • Using a cookie scoop, drop scoops of the batter onto the prepared baking sheets.
  • Flatten the top of each cookie slightly with the back of the scoop. Allow the cookies to cool on the counter for about 30 minutes, or until firm and set up. Enjoy.

Protein-packed natural peanut butter and oats form the base of these chewy retro treats drizzled with dark chocolate. They're delicious, gluten-free, and best of all, super easy to make.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Time 25m

Yield Makes about 18

Number Of Ingredients 8

1 cup packed light-brown sugar
1/4 cup whole milk
2 tablespoons unsalted butter
1 1/2 cups quick-cooking oats
1/2 cup creamy natural peanut butter, such as Justin's
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
Melted dark chocolate, slightly cooled but still pourable

Steps:

  • Bring brown sugar, milk, and butter to a boil in a small saucepan, stirring occasionally. Boil 1 minute, then remove from heat. Stir in oats, peanut butter, vanilla, and salt until well combined. Transfer dough to a small heatproof bowl.
  • Drop level tablespoons of dough onto a parchment-lined baking sheet, pressing down slightly. Let stand, uncovered, at room temperature until cool and set, at least 1 hour. Drizzle with chocolate; refrigerate until chocolate is set, about 5 minutes. Cookies can be refrigerated in an airtight container up to 3 days. Bring to room temperature before serving.

Tips:

  • Use creamy peanut butter: This will make the cookies smooth and creamy.
  • Chill the dough before baking: This will help the cookies hold their shape.
  • Don't overmix the dough: Overmixing will make the cookies tough.
  • Bake the cookies until they are just set: Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely before serving: This will help them firm up.

Conclusion:

These no-bake peanut butter cookies are a delicious and easy treat that can be made in just a few minutes. With just a few simple ingredients, you can have a batch of these cookies ready to enjoy in no time. They're perfect for a quick snack or dessert, and they're also great for packing in lunches or taking on picnics.
