EGGNOG ICE CREAM

Eggnog Ice Cream image

Creamy, nutmeg-spiced Christmas eggnog is one of my favorite holiday treats. Now I've turned this holiday cheer into an easy homemade eggnog ice cream recipe.

Provided by Claudia Fleming

Yield About 1 quart

Number Of Ingredients 10

3 cups milk
1¼ cups sugar
1 cup heavy cream
12 large egg yolks
2 tablespoons sherry
2 tablespoons brandy
½ tablespoon vanilla extract
1 teaspoon Myers's Original Spiced Rum
¼ teaspoon freshly grated nutmeg
Pinch of salt

Steps:

  • In a heavy saucepan, bring the milk, 1 cup of the sugar, and the cream to a simmer.
  • Meanwhile, whisk together the egg yolks and the remaining ¼ cup of sugar. Remove the milk mixture from the heat and add a little to the egg yolk mixture to warm it, whisking constantly to keep the yolks from curdling. Pour the egg yolk mixture into the hot milk mixture, whisking the milk constantly as you pour.
  • Return the custard to the stove and cook it over low heat, stirring constantly with a wooden spoon, until it thickens enough to coat the back of the spoon, about 5 minutes. Remove from the heat and strain it into a bowl. Let cool completely.
  • Stir the sherry, brandy, vanilla extract, rum, nutmeg, and salt into the custard. Chill until thoroughly cold, at least 4 hours.
  • Freeze in an ice-cream maker according to the manufacturer's instructions.

"EGG NOT" (EGGLESS EGGNOG)

I developed this recipe because of my love for eggnog and my dislike of the thought of drinking raw eggs. I spent quite a long time and much trial and error before being confident enough to finalize this recipe. Tastes just like the real thing! Enjoy!

Categories     Frozen Desserts

Time 10m

Yield 12 serving(s)

Number Of Ingredients 8

2 1/2 cups granulated sugar
6 large eggs, beaten
1 (14 ounce) can sweetened condensed milk
2 (13 ounce) cans evaporated milk (skim or whole)
1 tablespoon vanilla extract
1 1/2-2 quarts milk (skim or whole)
1 -3 cup mashed fresh fruit, such as strawberries or 1 -3 cup peach (puree in blender) (optional)
1 1/2-2 1/2 cups sugar, as needed to sweeten fruit (optional)

Steps:

  • Combine first 5 ingredients and 1 quart of the milk, adding fruit if desired (optional).
  • Pour into a 2-gallon ice cream freezer.
  • Add enough of the remaining 1-quart milk to fill the ice cream canister to the fill line on the canister.
  • You may not need all of this last quart.
  • Do not over-fill the canister.
  • Make ice cream according to manufacturer's instructions for the ice cream freezer/churn.
  • VARIATION: For Peppermint and Chocolate: Crush 1 small bag of peppermint candy pieces and add 1 small (6 oz) bag of chocolate mini-chips.
  • Add marshmallows and/or nuts, if desired.

Tips:

  • Ensure all ingredients are thoroughly chilled before beginning the recipe. This will help the ice cream freeze faster and smoother.
  • Use high-quality ingredients for the best flavor. Fresh, organic milk, cream, and eggs are ideal.
  • If you don't have an ice cream maker, you can still make this recipe. Place the ice cream base in a freezer-safe container and freeze for 4-6 hours, stirring every 30 minutes to prevent ice crystals from forming.
  • For a richer flavor, use heavy cream instead of milk.
  • Add your favorite mix-ins, such as chopped nuts, chocolate chips, or fruit, to the ice cream base before freezing.
  • Garnish the ice cream with whipped cream, nutmeg, or cinnamon before serving.

Conclusion:

This no-cook eggnog ice cream is a delicious and easy-to-make treat that is perfect for any occasion. With just a few simple ingredients and a little time, you can enjoy this creamy, flavorful ice cream without having to turn on the stove. So next time you're craving something sweet, give this recipe a try. You won't be disappointed!
