This is a recipe that my grandmother handed down to me and we still make it every year when it is time to harvest our garden. It is so much fun to make and will keep for up to a year in the fridge. The smell is wonderful and it is so easy.

NO-COOK FRESH TOMATO SALSA (FAT-FREE)
This will put any store-bought salsa to shame lol! This is a must using just-picked garden tomatoes and it is a fat-free recipe! Plan ahead this must be refrigerated a minimum of 8 hours even better 24 hours to blend flavors, don't even think about serving this before the chilling time! The tomatoes must be ripe and red for this and will need to be drained for a couple of hours over a strainer before using for this recipe. If you prefer a milder salsa then omit the jalapeno pepper. This complete recipe may be doubled. Don't omit the cilantro it is what makes the salsa! If desired you may use canned Mexican diced tomatoes drained in place of the fresh tomatoes, but the fresh is much better! Prep time includes chilling time.

TOMATO SALSA WITHOUT ONIONS
My mother-in-law loves Tex-Mex but has an onion allergy. After several attempts, I invented an authentic tasting salsa that derives some of it's smokey flavor from the roasted pepper. I've taken to roasting the peppers in bulk so I can always have some on hand.

Time 15m
Yield 4 1/2 cups
Number Of Ingredients 8
Steps:
- Put chilies and onions in a bowl.
- Using a very sharp knife, chop all the tomatoes into rough cubes 1/4 inch or less to a side. There should be about 3 cups altogether. Add the tomatoes, with their juice, to the bowl.
- Chop the sweet pepper into rough cubes 1/4 inch or less to a side; add to the vegetable mixture and mix thoroughly. Taste, and add a few drops of Tabasco, salt and pepper, adjusting seasonings to taste (remember that the flavors will develop as the salsa sits awhile). Cover loosely with plastic wrap and set aside for at least half an hour. If setting aside or storing for longer periods, salsa may be refrigerated, but the flavors are best just slightly chillier than room temperature. Serve with corn or tortilla chips to dip.

Tips
- Choose ripe, flavorful tomatoes: The quality of your salsa will depend on the quality of your tomatoes. Look for tomatoes that are deep red and free of blemishes.
- Use a variety of tomatoes: Don't be afraid to mix different types of tomatoes in your salsa. This will add complexity and flavor to the dish.
- Add some heat: If you like spicy salsa, add some chopped jalapeños or cayenne pepper to taste.
- Don't over-chop the tomatoes: You want your salsa to have some texture, so don't chop the tomatoes too finely. A rough chop is ideal.
- Let the salsa rest: After you make your salsa, let it rest for at least 30 minutes before serving. This will allow the flavors to meld together.
Conclusion
No-cook tomato salsa is a quick, easy, and delicious way to add flavor to your favorite dishes. It's perfect for tacos, burritos, nachos, and more. With just a few simple ingredients, you can make a delicious salsa that is sure to please everyone at your table.
