Yield 6 bowls

Number Of Ingredients 8

1 2/3 cups water
3/4 cup long grain rice
1 quart milk (Bestafar used whole milk, I use 2%)
1/4 cup sugar
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon vanilla
1/2 cup raisins (optional)

Steps:

  • 1. Boil water and add rice, cover and lower heat to simmer for 15 minutes 2. Add milk, raisins, sugar and vanilla and bring back to a boil 3. Cover, lower heat and simmer until the rice is tender, about 20-30 minutes 4. season with salt 5. Serve with butter, sugar and cinnamon.

Tips:

  • Use high-quality rice: Short-grain rice, such as Arborio or Carnaroli, is best for this recipe as it absorbs the milk and sugar well and becomes creamy when cooked.
  • Soak the rice: Soaking the rice for at least 30 minutes before cooking helps to remove the starch and make the rice more tender.
  • Use full-fat milk: Full-fat milk gives the rice pudding a richer flavor and creamier texture.
  • Sweeten to taste: The amount of sugar you add to the rice pudding is up to your personal preference. Start with a small amount and add more to taste.
  • Cook the rice pudding slowly: Cooking the rice pudding slowly over low heat allows the rice to absorb the milk and sugar evenly and prevents it from burning.
  • Stir the rice pudding frequently: Stirring the rice pudding frequently helps to prevent it from sticking to the bottom of the pot and ensures that it cooks evenly.
  • Add flavorings: You can add various flavorings to the rice pudding, such as vanilla extract, cinnamon, cardamom, or nutmeg, to enhance its taste.
  • Serve warm or cold: Rice pudding can be served warm or cold. If you are serving it cold, let it cool completely and then refrigerate for at least 2 hours before serving.
