Provided by Pierce Abernathy

Categories     Sides

Yield 10 servings

½ cup unsalted butter, cubed
½ cup heavy cream
½ cup whole milk
freshly ground black pepper, to taste
1 tablespoon fresh chives, chopped, for garnish

Steps:

  • Add the sweet potatoes and potatoes to a large pot and cover with cold water. Add the salt. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 20 minutes longer. Drain and transfer the potatoes to a large bowl. Set aside.

NOT SO SWEET SWEET POTATO CASSEROLE

Not so Sweet Sweet Potato Casserole image

This recipe is very different from the typical sweet potato casseroles topped with marshmallows you might often see on the Thanksgiving table. First of all, no marshmallows or brown sugar anywhere in sight. In fact, the only sugar in this recipe comes naturally from the potatoes themselves and the juice. Topped with cheese and baked til warm and yummy :) A nice change of pace.

Tips:

  • Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes with smooth skin. Avoid any that are soft or have cuts or bruises.
  • Wash the sweet potatoes thoroughly: Scrub the sweet potatoes with a vegetable brush under cold water to remove any dirt or debris.
  • Prick the sweet potatoes with a fork: This will help the steam escape during cooking and prevent the sweet potatoes from bursting.
  • Cook the sweet potatoes until they are tender: The cooking time will vary depending on the size of the sweet potatoes, but they are generally done when you can easily pierce them with a fork.
  • Let the sweet potatoes cool slightly before handling: This will help prevent them from breaking apart.
  • Season the sweet potatoes to taste: You can add a variety of seasonings to your sweet potatoes, such as salt, pepper, garlic powder, onion powder, or paprika.
  • Serve the sweet potatoes immediately: Sweet potatoes are best enjoyed when they are hot and fresh.

Conclusion:

Sweet potatoes are a delicious and versatile vegetable that can be enjoyed in a variety of ways. With their naturally sweet flavor and soft, fluffy texture, sweet potatoes are a great addition to any meal. Whether you are roasting them, baking them, or mashing them, there is sure to be a sweet potato recipe that you will love.
