6 cups sliced peeled tart apples
1-1/4 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
3/4 cup 2% milk
2 tablespoons butter, softened
3/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup biscuit/baking mix
TOPPING:
1 cup biscuit/baking mix
1/3 cup packed brown sugar
3 tablespoons cold butter
1/2 cup sliced almonds
Ice cream or whipped cream, optional

Steps:

  • In a large bowl, toss apples with cinnamon, allspice and nutmeg. Place in a greased 3-qt. slow cooker. In a small bowl, combine the milk, butter, sugar, eggs, vanilla and biscuit mix. Spoon over apples., For topping, combine biscuit mix and brown sugar in a large bowl; cut in butter until crumbly. Add almonds; sprinkle over apples. , Cover and cook on low for 6-8 hours or until the apples are tender. Serve with ice cream or whipped cream if desired.

2 tablespoons lemon juice
¼ cup water
½ cup all-purpose flour
½ cup rolled oats
1 cup packed brown sugar
¾ teaspoon ground nutmeg
1 pinch salt
½ cup butter, softened
1 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

3 large fall apples (Cortland or McIntosh are both great)
1/2 cup sugar
1 teaspoon cinnamon
1/4 teaspoon pure vanilla extract
1/4 cup cold butter (4 tbls. or 1/4 cup)
1/2 cup flour

Steps:

  • Preheat oven to 350°.
  • Grease the bottom only of a small (4 cups or so) casserole dish. Peel and core the apples, slice and place in a bowl. Top with sugar, cinnamon and vanilla, toss to coat. Set aside while preparing topping.

3 teaspoons pure vanilla extract
1 1/2 cups seedless raisins
1 1/4 pounds granulated sugar

12 ounces unsalted butter
1/2-ounce pecan pieces

200g light muscovado sugar
200g softened butter
4 eggs , beaten
100g self-raising flour
100g plain wholemeal flour
2 tsp baking powder
3 tbsp milk
2 tsp ground mixed spice
4 peeled and cored small eating apples (Cox's are ideal)
1 tbsp light muscovado sugar
1 tbsp plain flour
2 tbsp butter
50g roughly chopped blanched hazelnuts
100g butter , softened
140g icing sugar , sifted
drop vanilla extract (optional)

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper. In a large bowl, beat all the cake ingredients together until you have a smooth, soft batter.
  • Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon. Once the cake mix is in the pan, poke into it thick slices from the 4 peeled and cored small eating apples (Cox's are ideal). Then bake for about 30 mins (half way through baking add the streusel mix on top of one of the cakes, see next step below) until golden and the cake springs back when pressed. Turn onto a cooling rack and leave to cool completely.
  • Meanwhile, roughly rub together the light muscovado sugar, plain flour and butter. Mix in the roughly chopped blanched hazelnuts. Half-way through baking, sprinkle the streusel mix on top of one of the cakes.
  • To make the filling, beat the butter until smooth and creamy, then gradually beat in icing sugar. Beat in vanilla extract if you're using it. Spread the butter cream over the bottom of the sponge that doesn't have the streusel on top and sandwich the two halves of the cake. Keep in an airtight container and eat within 2 days.
