I like to plant Italian flat-leaf parsley in a long terra-cotta planter so I always have some on hand. It adds bright, fresh flavor to this pasta dish. -Barbara Penatzer, Vestal, New York

CHEESE TORTELLINI WITH NUTTY HERB SAUCE

Cheese Tortellini With Nutty Herb Sauce image

I enjoyed this as made as directed, but I intend to experiment by using blue cheese instead of the ricotta, and/or mascarpone. versatile recipe, I also didn't have walnuts so I used almonds, but walnuts might be the better choice. Feel free to experiment! Oh, I used a 400 gr packet of tortellini, that's what I had. Use the variety that suits you, I think a butternut-filled tortellini might be lovely with this. There's no garlic used, and I didn't add any this time, but hey, I like garlic! Next time, maybe! Finish off with a good grinding of black pepper. From "Kitchen Classics : The Italian Kitchen"

Time 20m

Yield 3 serving(s)

Number Of Ingredients 6

1 (9 ounce) package refrigerated cheese tortellini
1/2 cup butter, cubed
1/2 cup fresh parsley, minced
1/3 cup walnuts, chopped and toasted
1/4 cup parmesan cheese, shredded
fresh coarse ground black pepper, to taste

Steps:

  • Cook tortellini according to directions, drain.
  • In the same pan, melt butter.
  • Stir in the tortellini, parsley and walnuts, toss to coat.
  • Sprinkle with Parmesan cheese and pepper.

Tips:

  • To make the cheese filling, it's important to use a combination of hard and soft cheeses for the best flavor and texture. Parmesan, cheddar, and ricotta are classic choices that work well together.
  • When making the tortellini, be sure to work with the dough in small batches to keep it from becoming too dry or sticky. If the dough is too dry, it will be difficult to work with and may crack. If it's too sticky, it will be difficult to shape.
  • To get the perfect sear on the tortellini, make sure your skillet is hot before adding the pasta. Sear the tortellini in batches to avoid overcrowding the pan and ensure that each piece gets a nice crust.
  • For the sauce, you can use any type of tomato sauce you like. A simple marinara sauce or a more complex sauce with vegetables and herbs would both be delicious.
  • Garnish the tortellini with fresh herbs, such as basil or parsley, for a pop of color and flavor.

Conclusion:

This recipe for Nutty Cheese Tortellini is a delicious and unique take on a classic Italian dish. The combination of nutty cheese filling, crispy tortellini, and flavorful sauce is sure to please everyone at your table. Whether you're making it for a special occasion or a weeknight meal, this dish is sure to be a hit.
