OATMEAL COOKIE BARS

Oatmeal Cookie Bars image

These are easily the best homemade oatmeal cookie bars we've ever had, and that's really saying something! This recipe is simple to make and has all the essentials - chopped nuts, chocolate chips, high quality Gold Medal™ flour, and whole-grain oats. We love the ease of making oatmeal cookie bars because they have the chewy texture and flavor of an oatmeal cookie, but they take only 10 minutes to prep and use only one pan in the oven. Add extra indulgence by drizzling a little melted chocolate over these once they are cool and before you cut out the bars.

OATMEAL CHOCOLATE BAR COOKIES

Oatmeal Chocolate Bar Cookies image

Easy one-bowl oatmeal cookie bars with lots of chocolate chunks, very chewy and sweet. These are similar to regular chocolate-chip cookies, but baked in a sheet pan for convenience. I made these with chopped dark chocolate bars because dark chocolate is "healthier" than milk or semisweet chocolate - you can substiture one 12-ounce package of chocolate chips if you prefer

Provided by pomegranite1

Categories     Bar Cookie

Time 35m

Yield 36 serving(s)

Number Of Ingredients 10

1/2 lb unsalted butter
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
1/2 teaspoon vanilla
1 teaspoon baking soda
1/4 teaspoon salt
1 cup flour
3 cups reqular oatmeal (not instant) or 3 cups quick oatmeal (not instant)
10 -14 ounces dark chocolate, chopped coarsely

Steps:

  • Have ready, ungreased, two 9x9" square baking pans or one 15x10" jelly-roll pan.
  • Preheat oven to 375 degrees.
  • In a large glass or plastic mixing bowl, soften the butter (a few seconds in the microwave); it should be very soft but not completely melted. Using a heavy spoon, beat in both sugars, then beat in the eggs until smooth. Beat in the vanilla, baking soda and salt. Mix in the flour just until combined, then stir in the oatmeal and chocolate chunks.
  • Spoon the cookie dough into ungreased baking pans. Using the back of the spoon, lightly spread the dough, leaving it a little higher at the sides and corners than in the middle. Bake on the middle rack of the oven for 17-20 minutes, until set in the middle and brown around the edges. Because of the brown sugar, this cookie gets much darker than "golden brown" when it is done.
  • Cool in the pan. Cut into bars to serve. Take some to work or school to give away, because the large amount of oatmeal makes them dry out in a few days if you have leftovers.

BROWN BUTTER-OATMEAL CHOCOLATE CHIP COOKIES

Brown Butter-Oatmeal Chocolate Chip Cookies image

These cookies have a more toothsome appeal thanks to the addition of browned butter, vanilla bean paste, and oats. The bonus: the dough can be made ahead of time and refrigerated for those moments when the craving hits. Just make sure to shape the cookies before refrigerating, and let come to room temperature before baking.

Provided by thedailygourmet

Time 35m

Yield 36

Number Of Ingredients 10

1 cup unsalted butter
1 ¾ cups all-purpose flour
¾ cup quick cooking oats
1 teaspoon salt
1 teaspoon baking soda
1 cup packed brown sugar
½ cup white sugar
2 large eggs
1 teaspoon vanilla bean paste
2 cups semisweet chocolate chips

Steps:

  • Melt butter over medium heat in a stainless steel saucepan (this is important so you can tell when the butter has browned.) Whisk frequently for several minutes. When you start to smell the nutty aroma of the butter browning, and see small browned bits at the bottom of the pan, immediately remove pan from heat and carefully pour browned butter into a large mixing bowl.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Whisk flour, oats, salt, and baking soda together in a bowl until well combined; set aside.
  • Add both sugars to the bowl with the browned butter and beat with an electric mixer until smooth. Add eggs, 1 at a time, beating after each addition. Add vanilla bean paste and beat for 1 more minute. Add flour mixture in 3 batches, mixing well after each addition. Stir in chocolate chips.
  • Using a 1 1/2 tablespoon spring-hinged scoop, scoop out dough and place 2 inches apart on the prepared baking sheet.
  • Bake in the preheated oven until lightly browned, about 13 minutes. Transfer cookies to wire racks and allow to cool.
