1 cup rolled oats
1/2 cup butter
1 cup packed brown sugar
1 cup sugar
2 large eggs
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 cup brown sugar (, packed)
1/2 cup sugar
1 cup flaked coconut
6 tablespoons butter (, melted)
1/4 teaspoon vanilla extract
1/4 cup cream

Steps:

  • Preheat oven to 350 degrees. Grease and flour 13x9 inch baking pan.
  • In a small bowl, pour boiling water over oats, mix well and leave soaking until cooled.
  • In a large bowl, combine butter, 1 cup brown sugar, 1 cup white sugar, eggs, flour, baking soda, spices, and salt.
  • Fold in cooled oatmeal mixture until just combined.

1 cup oatmeal
1 cup white sugar
1 cup brown sugar
1/2 cup butter

3 tablespoons butter

3/4 cup boiling water
1/4 cup shortening
1/2 cup sugar

Steps:

  • Place oats in a small bowl; add boiling water. Let stand for 20 minutes. , In a small bowl, cream shortening and sugars. Add oat mixture and egg; mix well. 1/2 cup (113g) unsalted butter, (softened)
1/2 cup (105g) packed light brown sugar
1/2 cup (100g) granulated sugar

1 tsp vanilla extract
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp baking soda
1/2 tsp salt

Steps:
