1 cup whole wheat pastry flour (or all purpose flour)
¼ cup packed brown sugar
1 tablespoon baking powder
1 teaspoon cinnamon
½ teaspoon salt
1 cup milk
¼ cup oil
1 egg
1 teaspoon vanilla extract
1 cup oats
½ cup raisins
2 tablespoons packed brown sugar
2 tablespoons flour
1 teaspoon cinnamon
1 teaspoon oil (or melted butter)

Steps:

  • Preheat oven to 425* F. Spray a 12-cup muffin tin with baking spray and set aside.
  • In a large bowl, combine flour, sugar, baking powder, cinnamon and salt.
  • In a separate bowl, whisk milk, oil, egg and vanilla until combined.
  • Add milk mixture to flour mixture, stirring until just moistened. Gently fold in oats and raisins.
  • Divide mixture evenly among prepared muffin cups.
  • Prepare the topping, but combining brown sugar, flour, cinnamon and oil until combined. Sprinkle over the tops of the muffin batter.

In the preparation time I don't include the time while the oats and the sour milk are standing in the bowl (1 hour).

1 cup rolled oats
1 cup flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/3 cup butter, softened
