1 tablespoon salted butter (coconut oil for vegan)
2 cups Old Fashioned rolled oats (do not use instant oats or steel cut oats)
1/4 teaspoon kosher salt
1/4 teaspoon cinnamon
1 cup water
1 cup milk, plus more for serving (non-dairy milk for vegan)
4 cups water
2 cups milk
1 1/2 cups steel cut oats
Scant 1/2 teaspoon kosher salt
1/2 teaspoon cinnamon

Steps:

  • Melt the butter in a saucepan over medium heat. Add the oats and toast for about 2 to 3 minutes, stirring often, until fragrant. Add the salt and cinnamon. Turn the heat to low and carefully pour in the water or milk, stirring. Cover and cook for 5 minutes until tender, then remove from the heat. Serve immediately for a chunky texture, or stir in another 1/2 cup milk for a creamier body. The texture is intentionally chewy (not gloppy or soggy!). Top with desired toppings and serve. Store refrigerated for up to 2 week.
  • Bring water and milk to a boil. Watch to make sure that it does not boil over. Once just boiling, add the steel cut oats, salt and cinnamon and stir. Bring to a simmer. Stores refrigerated up to 1 week: it will become very thick, so stir in some milk or water when reheating.

1 cup raisins
1 cup water
¾ cup shortening
1 ½ cups white sugar
2 eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
½ teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground cloves
2 cups rolled oats
½ cup chopped walnuts

Steps:

  • Combine raisins and water in small saucepan. Simmer over low heat 20 to 30 minutes, until raisins are plump. Drain liquid from raisins into measuring cup. If necessary, add enough additional water to raisin liquid to measure 1/2 cup. Set drained raisins and 1/2 cup raisin liquid aside to cool.
  • In a large mixing bowl, beat shortening, sugar, eggs and vanilla with an electric mixer until smooth and creamy. Stir in reserved 1/2 cup raisin water.
  • Sift the flour, baking powder, baking soda, salt, cinnamon and cloves into a separate bowl. Stir flour mixture into shortening mixture with a spoon. Stir in oats, nuts and reserved raisins; mix well.
  • Drop dough by rounded teaspoonfuls, about 2 inches apart, onto ungreased baking sheets. Bake in a preheated 375 degrees F (190 degrees C) oven 8 to 10 minutes, or until lightly browned. Note: These cookies freeze well.

Hands down the best cookies I've ever tasted. I make then all the time and am always asked for the recipe! Sometimes, instead of raisins, I put in chocolate chips, and (my favorite) chocolate covered raisins.

1 3/4 cups flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 lb butter, soft
1 1/2 cups brown sugar
1/4 cup sugar
2 eggs
2 1/2 teaspoons vanilla
1 cup raisins
3 1/2 cups rolled whole oats

Steps:

  • Preheat oven to 350°F.
  • Sift (sifting is important!) flour, baking soda, baking powder, salt, cinnamon, nutmeg (its not in the recipe, but I add about 1/8-1/4 tsp of ground cloves, too) into a mixing bowl.
  • Beat butter, brown sugar, sugar, eggs, and vanilla with a hand mixer at medium speed.
  • Sift (yes, again!) flour mixture into butter mixture and mix well.
  • Fold in raisins (or chocolate chips or chocolate covered raisins) and oats.
  • Spoon 1.5 inch balls onto non-stick cookie sheet.
  • Bake at 350°F for 6-9 minutes, rotating half way through baking. (Should be lightly firm in the center when done) Be careful -- oatmeal raisin cookies don't look done when they are, so they are very easy to over cook (unless you want then to be crispy) :).
