Unsalted butter, for pan
2 cups all-purpose flour, plus more for pan
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup vegetable oil
1/2 cup packed dark-brown sugar
2 large eggs
1/2 to 3/4 cup fresh cider
1/4 cup apple brandy, preferably Calvados (optional)
1/2 teaspoon pure vanilla extract
2 small apples, preferably McIntosh, peeled, cored, and cut into 1/2-inch cubes (2 cups)

Steps:

  • Preheat oven to 350 degrees. Butter and flour a 5-by-9-inch loaf pan. Whisk together flour, baking powder, cinnamon, and salt. Mix together oil and sugar with a mixer on medium speed until combined. With machine running, add eggs, 1 at a time. Reduce speed to low, and beat in flour mixture in 3 additions, alternating with 1/2 cup cider and the brandy (if not using brandy, use an additional 1/4 cup cider), beginning and ending with flour. Add vanilla, and fold in apples. Pour mixture into pan, and top with oatmeal-walnut crumble.
  • Place pan on a rimmed baking sheet, and bake until a tester inserted into center comes out clean, 45 to 55 minutes. Transfer pan to a wire rack, and let cool for 15 minutes. Invert pan to remove bread. Let cool completely on a wire rack, crumble side up. Drizzle with caramel sauce just before serving.

1 1/2 cups flour
3 teaspoons baking powder
1/3 cup brown sugar
1/2 cup raisins
1/2 cup walnuts
2 eggs, lightly beaten
2 teaspoons vanilla
2 tablespoons canola oil
2 cups milk

Steps:

  • Preheat oven to 350.
  • Mix dry ingredients in a medium mixing bowl. Mix wet ingredients in a small bowl.
  • Add to dry ingredients and stir until just mixed. Batter will be lumpy.
  • Pour into a greased 8 or 9 inch square pan.

2 2/3 - 3 cups flour - 2 pck quick or reg yeast - 2 tsp salt - 1 1/2 cups water - 1/3 cup molasses - 4 tsp shortening - 2/3 cup rolled oats - 1 1/3 cups wh. wht flour - 1 cup chopped walnuts - 1 egg slightly beaten - 1 tbl water - 2 tbl oats

Steps:

  • in lg mixer bowl combine 2 cups flour, yeast,salt - mix well - in saucepan heat 1 1/2 cups water, molasses, shortening & oat until very warm - shortening does not need to melt - add to flour mix - blend at lo speed until moistened - beat 3 mins @ med speed - by hand, stir in wh wht flour, nuts & enough remaining flour to make a firm dough - knead on floured surface 5-8 mins; slightly sticky - place in greased bowl - turn to grease top - cover - let rise in warm place about 15 mins for quick yeast - 30 mins for active - punch down dough - divide into 2 parts - - shape ea in round loaf or pan rolls - place round loaves on greased cookie sheet or pan rolls in 8" sq greased pan - cover - let rise in warm pl about 20 mins for quick yeast - 40 mins for active - combine 1 egg & 1 tbl water - brush tops - sprinkle with oats - bake 20 - 25 mins - remove fr pan - cool
