Yield Makes 2 loaves

Number Of Ingredients 13

2 cups whole milk
1 cup old-fashioned rolled oats (not quick-cooking) plus additional for topping
1/2 cup warm water (105-115°F)
2 tablespoons active dry yeast (from 3 packages)
1/2 cup mild honey
1/2 stick (1/4 cup) unsalted butter, melted and cooled, plus additional for buttering pans
3 cups stone-ground whole-wheat flour
About 2 cups unbleached all-purpose flour
1 tablespoon salt
Vegetable oil for oiling bowl
1 large egg, lightly beaten with 1 tablespoon water
Special Equipment
2 (8- by 4-inch) loaf pans

Steps:

  • Heat milk in a 1 1/2- to 2-quart saucepan over low heat until hot but not boiling, then remove pan from heat and stir in oats. Let stand, uncovered, stirring occasionally, until cooled to warm.
  • Stir together water, yeast, and 1 teaspoon honey in a small bowl; let stand until foamy, 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.) Stir yeast mixture, melted butter, and remaining honey into cooled oatmeal.
  • Stir together whole-wheat flour, 1 1/2 cups unbleached flour, and salt in a large bowl. Add oat mixture, stirring with a wooden spoon until a soft dough forms. Turn out onto a well-floured surface and knead with floured hands, adding just enough of remaining unbleached flour to keep from sticking, until dough is smooth, soft, and elastic, about 10 minutes (dough will be slightly sticky). Form dough into a ball and transfer to an oiled large bowl, turning to coat. Cover bowl loosely with plastic wrap and a kitchen towel; let rise at warm room temperature until doubled in bulk, 1 to 1 1/2 hours.
  • Lightly butter loaf pans. Turn out dough onto a lightly floured surface and knead several times to remove air. Divide dough in half and shape each half into a loaf, then place 1 loaf in each buttered pan, seam side down, tucking ends gently to fit. Cover loaf pans loosely with a kitchen towel and let dough rise in a draft-free place at warm room temperature until doubled in bulk, about 1 hour.
  • Put oven rack in middle position and preheat oven to 375°F. Lightly brush tops of loaves with some of egg wash and sprinkle with oats, then bake until bread is golden and loaves sound hollow when tapped on bottom, 35 to 40 minutes. (Remove 1 loaf from pan to test for doneness. Run a knife around edge of pan to loosen.)
  • Remove bread from pans and transfer to a rack to cool completely, about 1 1/2 hours.

WHOLE WHEAT OATMEAL BUTTERMILK BREAD

WHOLE WHEAT OATMEAL BUTTERMILK BREAD image

Categories     Bread

Number Of Ingredients 10

1 1/2 cups rolled oats
1 cup boiling water
1/4 cup room temperature water
2 tablespoons + 1 teaspoon honey
2 teaspoons instant yeast
1 1/2 cups buttermilk, at room temperature
1/2 cup extra virgin olive oil
2 1/2 cups white whole wheat flour
2 1/2 cups all-purpose flour
2 teaspoons salt

Steps:

  • Add 1 1/4 cups of the oats to a medium heatproof bowl. Pour the boiling water over them and stir to combine. Let sit, uncovered, for 10 minutes, stirring frequently. In the bowl of a stand mixer fitted with the paddle attachment, combine the soaked oats, room temperature water, 2 tablespoons of the honey, yeast, buttermilk, olive oil, both flours and the salt. Mix until a rough dough comes together, then switch to the dough hook and knead on low speed for about 10 minutes. When the dough is ready it will have a satiny finish, but it will still be somewhat wet and will cling to the dough hook (if necessary, you can add slightly more flour to the dough). Spray a large bowl with nonstick cooking spray then add the dough, turning to coat. Cover and let rise for 1 hour, or until just about doubled in size. Turn the dough out onto a floured work surface and press down to release excess air bubbles. Shape the dough into a 12x6-inch rectangle, with a long side facing you. Fold the sides in so they meet in the middle, then roll the dough into a log, starting with the end closest to you. Pinch the dough closed at the seam. Spray a 10-inch loaf pan (or at least 9 inches, this is a big loaf of bread) with nonstick cooking spray. Add the dough to the pan, seam side down, pressing it into the corners. In a small bowl, mix the remaining teaspoon of honey with 1/2 teaspoon of hot water. Brush the mixture over the top of the loaf then sprinkle it with the remaining 1/4 cup of oats. Let sit for about 30 minutes, or until the loaf rises just over the top of the pan. Meanwhile, preheat oven to 375 F. Bake the bread for 50-60 minutes, or until the internal temperature is about 200 F. Transfer the pan to a wire rack and turn the bread out. Let cool completely before slicing.

  • Ripe Bananas: Make sure to use ripe bananas for a sweeter and more flavorful loaf.
  • Mash Bananas Properly: Mash the bananas until smooth, as lumps can affect the texture of the bread.
  • Precise Measurements: Use accurate measuring cups and spoons to ensure the correct proportions of ingredients.
  • Room Temperature Ingredients: Bring eggs and butter to room temperature before mixing to ensure proper blending.
