7 tablespoons salted butter
4 tablespoons olive oil
1 large onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
1 teaspoon seasoned salt
1 teaspoon lemon pepper
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
Pinch kosher salt
Pinch freshly ground black pepper
1/2 cup plus 3 tablespoons all-purpose flour
6 to 8 thin-cut breakfast pork chops
1 1/2 cups low-sodium chicken stock
1 tablespoon cream
Smashed Red Potatoes, recipe follows, for serving
6 large red potatoes
6 tablespoons salted butter
Pinch kosher salt
Pinch freshly ground black pepper

Steps:

  • Heat 2 tablespoons butter plus 2 tablespoons oil in each of 2 skillets over medium heat.
  • Put the onion and pepper slices in one skillet and cook until browned and caramelized, about 10 minutes.
  • Meanwhile, whisk together the seasoned salt, lemon pepper, cumin, cayenne pepper, salt, black pepper and 1/2 cup of the flour in a pie plate. Dredge the pork chops in the flour mixture.
  • Fry the chops in batches in the other skillet until well browned, 2 to 3 minutes per side. Remove the chops from the skillet and set aside.
  • To this skillet, add the remaining 3 tablespoons butter and 3 tablespoons flour. Stir and cook until the roux gets some color on it, about 2 minutes. Whisk in the stock a bit at a time, working out all the lumps, then add the cream. Add the onions and peppers, coating them in the sauce.
  • Serve with plenty of sauce and the caramelized onions/peppers and accompany with the Smashed Red Potatoes.
  • Put the potatoes in a glass or microwavable bowl and microwave according to the manufacturer's instructions, 5 to 10 minutes. Carefully remove the bowl and smash the potatoes with a fork. Add the butter, salt and pepper, then smash again. Cover with a towel until ready to serve.

"Obie" was a friend of hers who owned a nightclub/restaurant and smothered chops were one of the many specialties made there. The use of pancake mix in lieu of plain flour gives this dish a slight sweetness along with the sugar as well. The only change I made was the addition of mushrooms to the gravy. 6 center cut 1-inch pork chops
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon ground black pepper

1/4 cup aunt jemima's pancake mix
2 tablespoons corn oil
3 medium onions, sliced
4 ounces of sliced raw mushrooms
1 teaspoon salt

Steps:

  • Preheat your oven to 350 degrees.
  • Rinse chops, then pat them dry. Sprinkle with spices mentioned above. Then dredge into pancake mix.
  • Heat the oil in a large skillet over medium heat. Place the chops into the skillet. Brown the chops on both sides. Remove from the skillet and place in a roasting pan.

I started making this delicious dish almost 40 yrs ago when I found the recipe in a Woman's Day magazine. They are truely the best pork chops I have ever tasted or made. Anyone who has had them always give them rave reviews. The original recipe calls for 1 inch thick pork chops but I never make it with ones that thick. I have even used thin ones or whatever I have on hand. You just have to adjust the cooking time. I also always double the gravy ingredients, except the onions, so we have lots for the mashed potatoes. These pork chops turn out so moist and delicious.

6 - bone in center cut or lean loin pork chops
1/2 teaspoon(s) salt
1/4 teaspoon(s) white pepper
1/4 cup(s) any bisquick or pancake mix
2 tablespoon(s) vegetable oil
3 medium onions, chopped

Steps:

  • Wipe chops with paper towels to dry off; sprinkle with 1/2 tsp. salt and 1/4 tsp white pepper; coat with pancake mix. Heat oil in large skillet; brown chops on both sides and place in casserole. I use a large lasagna pan, so that there's plenty of room for the gravy not to spill over) Saute/fry onions with remaining salt, pepper and sugar in same skillet, till lightly browned. Stir in flour; cook for at least 1 - 2 minutes to cook the flour taste out. Gradually add in boiling water while stirring with a whisk. Cook on medium heat, stirring constantly, till thickened and boils. Pour over chops and cover with foil. Bake at 350 for 1 hour 20 min. Remove chops to serving platter; keep hot. Strain gravy through a sieve, pressing onions with a spoon. (I skip this part bcuz I love the onion pieces in the gravy) Skim fat from gravy if necessary. Serve mashed potatoes and the gravy with chops. Yummo!

  • Note: I have tried making these in a slow cooker, and find you have to zig zag stack them and they have a tendency to fall apart...I like keeping them in a single layer,so they don't break up so much. If you are just cooking for two, and can put them in a single layer, that may work better. But personally, I love leftovers of this dish, and make alot of these yummy pork chops and mashies so we can have reruns. hehe

1/2 cup light brown sugar
1/4 cup apple cider vinegar
2 tablespoons kosher salt, plus more for sprinkling
1 tablespoon granulated garlic
1 tablespoon whole black peppercorns
1 tablespoon dried thyme
1 teaspoons mustard powder
Pinch dried red pepper flakes
2 cups ice cubes
2 double-cut pork loin chops (1 bone), about 1 1/2-inches thick, 1-pound each
Freshly ground black pepper
Extra-virgin olive oil
4 ounces Brie
Olive oil
1 green apple, such as Granny Smith, roughly sliced
1/2 sweet onion, such as Vidalia, roughly sliced
1/4 cup Calvados
1/2 cup low-sodium chicken broth
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter, cold and cubed

Steps:

  • For the brine and pork chops: Combine 2 cups water, brown sugar, vinegar, 2 tablespoons salt, garlic, peppercorns, thyme, mustard powder and red pepper flakes in a large saucepan and set over high heat. Bring to a simmer and stir until the sugar has dissolved. Remove from the heat and add the ice cubes to bring down the temperature. Once cooled and the ice cubes have dissolved, add to a resealable plastic container (or a plastic bag) and add the pork chops. Place in the fridge for 1 hour.
  • Tie each pork chop around the perimeter with a piece of kitchen twine. This will help the chop retain a nice, round shape while cooking.
  • Preheat the oven to 350 degrees F.
  • Remove the chops from the brine and pat dry with some paper towels (removing the excess moisture on the surface allows the pork chop to sear and caramelize). Sprinkle lightly with salt and pepper. Set a large cast-iron skillet over high heat. Coat the pan with oil and when the oil starts to smoke, add the pork chops to the pan. Cook over high heat until well browned, 8 to 10 minutes. Turn the chops over and reduce the heat slightly to allow the chops to cook through. Cook on the second side until golden brown, about 8 minutes. When done, remove the pork chops from the skillet and place onto a sheet tray. Divide the slices of the Brie between the chops and layer evenly on each so they are covered well. Place the sheet tray into the oven and cook until the Brie is just melted and the pork has cooked to 140 to 145 degrees F. Remove from the oven and transfer the chops to a plate to rest.
  • For the pan sauce: Meanwhile, place the skillet back over medium-high heat. Add a drizzle of olive oil and then add the apples and onions. Saute for 4 to 5 minutes, and then add the Calvados. Allow the alcohol to cook off (you can flambe at this stage if desired by igniting the Calvados in the pan). Once the Calvados has reduced, add the stock and simmer. Season with some salt and pepper. Allow to reduce for 2 to 3 minutes, and then remove from the heat and swirl in the cold butter cubes. This will thicken the sauce and give it a nice sheen. Serve the Brie-topped pork chops with the sauce.

6 (3/4 inch) thick pork chops
½ cup water
⅓ cup all-purpose flour
1 (14.5 ounce) can fat-free chicken broth
1 tablespoon browning sauce

1/2 tsp ground black pepper
1 tsp granulated garlic powder
1 small onion sliced julienne
1/2 cup all-purpose flour
5 center cut pork chops
1/3 cup vegetable oil for frying
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup milk

Steps:

  • 1. Place flour in a large resalable plastic bag. Add chops two at a time, and shake to coat. 2. Heat oil in a large skillet over medium-high heat, and fry chops until brown on both sides. Remove chops from skillet, add onions, garlic and pepper and reduce heat to medium and sauté. 3. Blend soup and milk in the skillet, stirring to scrape up the bits of breading left over from the chops. You can adjust the amount of milk depending on how thick you want the gravy to be (it will thin a bit during the cooking process). Bring to a gentle boil, increasing heat slightly if necessary. 4. When soup mixture is bubbling, return chops to skillet. Cover, and reduce heat to low. Simmer for 20 minutes, or until chops are cooked through.
